Ingredients

  • 1 lb. ground beef
  • 2 Tbsp diced jalapeño
  • ¼ tsp salt
  • ¼ tsp pepper
  • Bacon Rolls (recipe below)
  • Jalapeño Queso (recipe below)
  • 6 leaves Boston or butter lettuce (can also use romaine or lettuce of your choice)

Bacon Rolls (makes 12 rolls)

  • 2 Tbsp active dry yeast
  • 1 cup warm water
  • cup olive oil
  • 2 Tbsp granulated sugar
  • 2 large eggs, divided
  • 1 Tbsp salt
  • 2 cups all-purpose flour
  • 1 ½ cups whole wheat flour
  • 4 strips crispy bacon

Jalapeño Queso

  • 8 oz. cream cheese
  • 6 oz. sharp cheddar cheese
  • ½ cup diced tomatoes (from 1 small tomato)
  • 2 cloves garlic, minced
  • 1 Tbsp diced jalapeño

Instructions

  • In a large bowl, combine ground beef, diced jalapeño, salt, and pepper. Form into 6 patties.
  • Place patties on a grill pan or skillet over medium heat. Cook for about 4 minutes on each side, until desired doneness.
  • Slice bacon rolls in half and top with lettuce and burger (you'll have 6 leftover buns). Spoon jalapeño queso over the top.

Bacon Rolls

  • Pre-heat oven to 425 degrees and lightly grease a baking sheet.
  • In a large bowl, combine yeast and water. Let sit for about 5 minutes until mixture becomes frothy. Stir in olive oil, sugar, one of the eggs, and the salt.
  • Using a wooden spoon, gently stir in both flours. Dough should be nice and soft; if it’s feeling dry, you can add a bit more warm water in. Crumble bacon over the dough.
  • On a lightly floured surface, gently knead the dough for about 5 minutes
  • Separate the dough into 12 balls and place a couple inches apart from each other on prepared baking sheet. Cover with a towel and let sit in a warm spot for 10 minutes. Beat the second egg in a small bowl. Remove towel and lightly brush the tops of the buns with egg.
  • Bake rolls for 9-12 minutes, until they're turning golden. Move to wire racks to cool.

Jalapeño Queso

  • Place cream cheese and cheddar cheese in a medium saucepan over medium heat and gently stir until the cheeses are melted.
  • Stir in tomatoes, garlic, and jalapeño. Keep warm until ready to serve.
