Ingredients

  • Sea salt or coarse sugar, for rimming glasses (if desired)
  • 2 oz tequila
  • 2 oz coconut milk (from a can), well shaken
  • 2 oz blueberry simple syrup (recipe below)
  • Ice

Blueberry Simple Syrup

  • 1 cup granulated sugar
  • 1 cup water
  • 1 cup fresh blueberries

Instructions

  • If you want to rim your glass, place sea salt or coarse sugar on a small plate and lightly brush simple syrup around rims of glass. Dip rim on the plate of sea salt/sugar to coat.
  • In a shaker filled with ice, add tequila, coconut milk, and blueberry simple syrup. Shake really well.
  • Pour drink into an ice-filled glass and garnish with fresh blueberries, if desired.

Blueberry Simple Syrup

  • Put sugar, water, and blueberries in a medium-size saucepan and bring mixture to a boil. Once boiling, lower heat and let simmer for about 15 minutes, until the mixture thickens.
  • Strain the mixture into a bowl, being sure to press down on the berries to extract as much juice as possible. Keep syrup in bowl or pour into a mason jar and place in fridge to cool completely before using.

Notes

  • You should be able to make about 6 cocktails with 1 batch of simple syrup.
