Prep Time: 10 minutes
Cook Time: 20 minutes
Total Time: 30 minutes
Makes: 16 small meatballs

Ingredients

  • 1 lb. ground turkey
  • 1 large egg
  • cup panko
  • cup chopped onion
  • 2 tsp chopped chives
  • ¼ tsp salt
  • ¼ tsp pepper
  • 2 oz. brie cheese, cut into 16 small cubes

Instructions

  • Pre-heat oven to 400 degrees.
  • In a medium mixing bowl, combine ground turkey, egg, panko, onion, chives, salt, and pepper. Use your hands to thoroughly mix ingredients together.
  • Form the ground turkey into small golf ball-sized meatballs and arrange on a rimmed baking sheet. Make small indents in the meatballs and insert the cubes of brie into the indents. Using your fingers, gently seal the top of the meatball, to cover the brie.
  • Bake for 20-22 minutes until the meatballs are golden brown and are cooked through (if you use a thermometer, they should register at 165 degrees).
  • Serve as an appetizer or an entree, along with pasta or a vegetable.
