Lucky Charms Hot Chocolate

Ingredients

  • 1 cup Lucky Charms cereal, plus ½ cup Lucky Charms marshmallows
  • 2 cups whole milk
  • 4 oz. high-quality milk chocolate bar, roughly chopped
  • cup marshmallow fluff (recipe below or store-bought)

Marshmallow Fluff

  • 1 large egg white
  • ½ cup light corn syrup
  • tsp salt
  • ¾ cup confectioners' sugar
  • ½ Tbsp vanilla extract
  • tsp cream or tartar

Instructions

  • Pour 1 cup Lucky Charms cereal and milk in a bowl and place in fridge for an hour. After chilling, pour milk through a strainer into a saucepan, leaving cereal behind.
  • Set saucepan over medium heat and once milk is hot (but not boiling), add chopped chocolate and whisk to combine. Continue whisking until chocolate has completely melted into milk, making sure you don't let milk boil.
  • Remove from heat and stir in marshmallow fluff.
  • Pour hot chocolate into mugs and top each mug with ¼ cup marshmallows.

Marshmallow Fluff

  • In the bowl of an electric mixer or in a large bowl with a hand mixer, beat together egg white, corn syrup, and salt on high-speed for about 4-5 minutes, until it thickens and turns white.
  • Mix in confectioners' sugar, vanilla, and cream of tartar on low-speed for about 1 minute, until well combined.
  • You can keep the marshmallow fluff in your fridge in an airtight container for about 10 days.
