Ingredients

  • ¾ cup (1 ½ sticks) unsalted butter, room temperature
  • ½ cup granulated sugar
  • ½ cup packed brown sugar
  • 1 large egg
  • 2 tsp vanilla
  • 2 cups pancake mix
  • 1 cup chocolate chips

Instructions

  • Preheat oven to 350 degrees and line two baking sheets with parchment paper or Silpats.
  • In a stand mixer or in a bowl with hand mixer, cream together butter, granulated sugar, and brown sugar until light and fluffy, 3-4 minutes.
  • Mix in egg and vanilla until just combined.
  • With the mixer on low, blend in pancake mix until just combined, taking care not to over-mix. Fold in chocolate chips.
  • Place bowl in fridge to let cookie dough chill for about 30 minutes.
  • Scoop about 3 Tbsp cookie dough (I use a #20 cookie scoop) onto prepared cookie sheets, about two inches apart. Cookies will spread a bit.
  • Bake for 10-12 minutes, until cookies are just turning golden around edges. Let cool in pan for a couple minutes before moving to wire racks to cool completely.
