Ingredients

  • 1 cup pitted Medjool dates (about 9 dates)
  • ½ cup cashews (or nuts of your choice)
  • ½ cup old-fashioned oats
  • 1 tsp ground ginger
  • ½ tsp ground cinnamon
  • ¼ tsp ground allspice
  • tsp ground nutmeg
  • tsp salt
  • 2 Tbsp chia seeds
  • 1 Tbsp molasses
  • 1 tsp vanilla extract
  • 1-2 Tbsp Sprinkles, if desired

Instructions

  • Put dates, nuts, and oats in the bowl of a food processor and process until crumbly.
  • Add ginger, cinnamon, allspice, nutmeg, salt, chia seeds, molasses, and vanilla and process until mixture is well-combined and sticky.
  • Add sprinkles (if using) and pulse a couple times to combine.
  • Scoop mixture out and form golf ball-sized balls. Place on a parchment paper-lined baking sheet.
  • Chill for at least 30 minutes before enjoying.
  • Keep stored in an airtight container in the fridge.

Notes

  • I recommend keeping the gingerbread energy balls in an airtight container in your fridge — they should keep for about a week. You can also keep them in your freezer for 3-4 months.
