Muffin Mix Pancakes

Did you know that with just 3 ingredients you can make Muffin Mix Pancakes? If you're out of traditional pancake ingredients and have a package of muffin mix, an egg, and milk (or even water), you can make these super easy, incredibly delicious pancakes in no time at all!

Ingredients

  • 1 (6.5-7 oz.) package or box muffin mix, flavor of your choice
  • 1 large egg, lightly beaten
  • ½ cup milk

Instructions

  • Put muffin mix in a medium bowl.
  • Add egg and milk and mix until just combined, taking care not to over-mix (it's OK if the batter is a little lumpy).
  • Heat a griddle or large skillet over medium-low heat and brush lightly with a little butter or cooking spray.
  • Spoon about 3 Tbsp of batter onto the griddle and cook for 1-2 minutes, until bubbles form on the tops of pancakes. Flip and continue to cook until second side is golden.
  • Remove cooked pancakes to a plate and tent with foil to keep warm (or keep in warm oven) and continue with remaining batter.

Notes

  • If you have a larger box or bag of muffin mix, I recommend weighing out anywhere between 6.5 and 7 oz. of mix (or doubling recipe if you have a 13-14 oz. box).
  • If you don't have milk, you can replace with water or another liquid.
  • If you don't have an egg, see body of post for egg substitute recommendations.
  • Feel free to use any flavor muffin mix you want or add in any additional mix-ins to your batter.
