Naan Breakfast Pizza

These Naan Breakfast Pizzas are made with scrambled eggs, bacon, and cheddar cheese. They're easy enough to make for a weekday breakfast, but also make a super fun brunch party dish!

Ingredients

  • 2 naan rounds (I use 3 oz. naan rounds)
  • 6 large eggs
  • ¼ tsp garlic powder
  • ¼ tsp salt
  • ¼ tsp pepper
  • 1 Tbsp + 1 tsp olive oil, divided
  • 3 slices crispy cooked bacon, crumbled
  • ½ cup shredded cheddar cheese
  • 21 Tbsp chopped parsley, for topping (optional)
  • Red pepper flakes, for topping (optional)

Instructions

  • Preheat oven to 400 degrees and line a baking sheet with foil.
  • In a medium bowl, whisk together eggs, garlic powder, salt, and pepper.
  • Add 1 Tbsp oil (or butter) to a large skillet over medium-low heat and pour egg mixture in. Let eggs sit for a couple minutes until they start to set and firm up at edges. Using a spatula, begin to pull the eggs in from the edges to the middle of the pan. Continue this motion until eggs are cooked completely.
  • Remove from heat and stir in crumbled bacon.
  • Place naan rounds on prepared baking sheet and lightly brush with remaining 1 tsp oil.
  • Divide egg mixture between two naan rounds and top with cheese.
  • Place in oven for about 10 minutes, until cheese is melted. Remove from oven and top with chopped parsley and red pepper flakes, if desired.
