Cinnamon Roll Ice Cream

Easy & Delicious!

If you love the breakfast baked goods, you need to try this cinnamon ice cream that's packed with cinnamon roll dough and a sweet cinnamon swirl!

– Whole milk – Granulated sugar – Ground cinnamon – Large egg yolks – Heavy cream – Vanilla extract



– Unsalted butter – Light brown sugar – Vanilla extract – Salt – All-purpose flour – Ground cinnamon – Milk


– Unsalted butter – Corn syrup – Light brown sugar – Ground cinnamon

Make Cookie Dough:  In bowl of a stand mixer or  large bowl with hand mixer, cream butter & brown sugar until light & fluffy. Mix in vanilla and salt.

Step 1

Beat in flour & cinnamon until combined. Stir in milk. Refrigerate cookie dough for at least one hour.

Step 2

Heat milk, sugar, & cinnamon in saucepan over medium heat. Stir constantly, until the just the point of simmer. Remove from heat.

Step 3

In a separate medium bowl, lightly whisk egg yolks.

Step 4

Pour 1/2 the warm milk into the bowl yolks while whisking. Pour egg/milk mixture back to saucepan with the rest of the milk. 

Step 5

Cook mixture over low heat, stirring constantly, until it thickens enough to coat the back of spoon.

Step 6

Pour the heavy cream into a separate large bowl.

Step 7

Strain egg/milk mixture into heavy cream & stir to combine. Add vanilla. Cover with plastic wrap & place in the fridge for at least 4 hours. 

Step 8

Make Cinnamon Swirl: In a small bowl, combine melted butter, corn syrup, brown sugar, & cinnamon.

Step 9

Process in ice cream maker. When the ice cream is almost done hardening, mix in cinnamon roll dough & cinnamon swirl mixture.

Step 10

Scoop ice cream in airtight containers & place in freezer for 4+ hours, but ideally overnight.

Step 11
