Grilled Cheese Burrito

Have you ever tried Taco Bell's Grilled Cheese Burrito? Now you can make them at home with this easy copycat recipe that combines two of the best foods! 

Makes:  4 servings Prep Time: 15 mins Cook Time: 15 mins

Ingredients:

– Ground beef – Water – Taco seasoning – Cooked seasoned rice – Shredded cheese: I use a blend of cheddar, Monterey Jack, & mozzarella  – Nacho cheese sauce – Chipotle sauce – Sour cream – Tortilla strips: AKA Fiesta Strips – Unsalted butter – Flour tortillas: 10-12 inches

Heat large skillet over medium. Add ground beef, breaking it up as it cooks. Cook until beef is browned & no longer pink, 5-7 minutes.

Cook Beef

Drain excess grease if necessary. Return skillet to stove over low heat. Add water & taco seasoning & cook until mixture thickens, about 2 mins.

Warm the flour tortillas in the microwave or on a griddle until soft & pliable. Place warmed tortillas on a flat surface.

Warm Tortillas

Spoon ground beef in center of each tortilla. Add rice, cheese, cheese sauce, chipotle sauce, sour cream, & tortilla strips.

Add Filling

Fold the sides of the tortilla towards the center, like an envelope, & roll it up tightly.

Fold Burrito

Preheat griddle or large skillet to medium heat.

Heat Griddle

Brush top & bottom of each burrito with butter. Sprinkle cheese onto the top of each burrito & press down to adhere.

Add Cheese

Place burritos on griddle cheese-side down. Cook about 1 min until golden. Add more cheese to top & press down to adhere. Flip & cook for another min until golden.

Feel free to add additional toppings to burritos (sour cream, guacamole, salsa, etc.).
