Raspberry & Dark Chocolate Muffins

These easy-to-make muffins have the most delightful flavor combination: red raspberries and dark chocolate! They're a perfect Valentine's Day treat, but can be enjoyed any day!

– All-purpose flour – Baking powder – Granulated sugar – Unsalted butter – 2% Greek yogurt – Water – Large eggs – Dark chocolate – Raspberries – Confectioners' sugar

Preheat oven to 375 & line a jumbo muffin tins with papers or grease lightly.

Prep Recipe

Combine flour, baking powder, & sugar in a large bowl & make a well in the center.

Make Batter

Put melted butter in a large bowl. Stir in yogurt & water. Add eggs, stirring well after each addition.

Pour wet ingredients into the well in dry bowl & stir to combine. Add raspberries & chocolate.

Fold chocolate and raspberries into the batter.

Divide batter evenly between cavities of tins, filling each about ¾ of the way full.

Bake Muffins

 Bake 27-30 mins, until tops are turning golden. If making standard-size muffins, bake for 20-23 mins. Let cool & sprinkle with confectioners' sugar.
