Salt Baked  Fish

Have you ever made salt baked fish? It's such a delicious & impressive dish & guess what? It's also very easy to make with a few simple ingredients!

Why Salt Bake Fish?

Besides the fact that salt crusted fish looks beautiful, the salt coating actually helps the heat of the oven cook the delicate fish evenly and gently without added cooking oils. It results in a super moist fish that's perfectly seasoned!

Ingredients:

– Whole fish like red snapper or branzino: I recommend 2-3 lbs, either 2 smaller fish or 1 large fish, cleaned & gutted – Coarse Kosher Salt – Egg whites -Herbs and/or citrus to stuff fish

How to Purchase Whole Fish

Make sure your store has whole branzino, red snapper, sea bass, monkfish, or dorade. And ask your fish monger to clean & gut the fish for you, so you don’t have to do it yourself and when you bring it home, it’s ready to go.

Preheat oven to 400 degrees.

Prep Recipe

Stuff fish with herbs and/or citrus. I use grapefruit slices, lime & lemon slices, mint, & parsley.

Stuff Fish

In a large bowl, mix together kosher salt & egg whites until mixture resembles wet sand.

Make Salt Mixture

Spread 1 cup of mixture on bottom of a large baking sheet to create a "bed" for the fish. Lay fish on bed & use the rest of the mixture to coat the fish, gently pressing down.

Salt Fish

Bake fish for about 30 mins (or until fish has an internal temp of about 135 degrees). Remove from oven & let cool slightly, about 5 mins.

Bake

Use a mallet to gently crack the salt coating away from the fish.

Crack Salt

Serve fish as is or remove the skin and fillet before serving.
