Strawberry Mint Ice Cream

Fresh strawberry & mint are some of the best flavors of summer! They combine in this easy-to-make homemade ice cream both kids & adults will love!

Makes: 1 quart Prep Time: 30 mins Chill Time: 8 hours

Ingredients:

– Heavy cream – Whole milk – Salt – Large eggs – Granulated sugar – Fresh strawberries – Mint leaves – Lemon juice

Combine cream, milk, & salt in a large saucepan over medium heat. Stir constantly, until the mixture reaches point of simmer.

While the milk is heating, lightly whisk eggs & ½ cup sugar in a separate medium bowl.

Slowly pour about half of milk mixture into bowl with eggs, whisking all the time. Pour egg/milk mixture back into saucepan with the rest of the milk.

Cook over medium-low heat, while stirring, until the mixture slightly thickens (and coats back of spoon). Remove from heat.

Pour mixture through strainer into large heat-proof bowl. Cover with plastic wrap, making sure wrap is touching the top of the cream mixture, and move to fridge 4 hours.

In a separate bowl, mix together strawberries, chopped mint, ¼ cup sugar, & lemon juice.

Mash mixture together. Place in fridge to chill at least an hour.

When you're ready to make ice cream, mix together strawberry puree & cream mixture.

Process in ice cream maker according to manufacturer's instructions.

Transfer finished ice cream into quart-sized container &  place in freezer for 4+ hours to let it harden.
