Put dates, nuts, and oats in the bowl of a food processor and process until crumbly.
Add ginger, cinnamon, allspice, nutmeg, salt, chia seeds, molasses, and vanilla and process until mixture is well-combined and sticky.
Add sprinkles (if using) and pulse a couple times to combine.
Scoop mixture out and form golf ball-sized balls. Place on a parchment paper-lined baking sheet.
Chill for at least 30 minutes before enjoying.
Keep stored in an airtight container in the fridge.
