Chocolate Stout Cupcakes

These Chocolate Stout Cupcakes have Guinness in the cake, Irish whiskey in the filling, and Baileys in the frosting. Talk about the perfect St. Patrick's Day dessert!

Makes:  12 cupcakes Prep Time: 30 mins Bake Time: 20 mins

Cupcake Ingredients:

– Stout of your choice – Unsalted butter – Cocoa powder – All-purpose flour – Granulated sugar – Baking soda – Salt – Egg – Sour cream

Filling & Frosting Ingredients:

– Bittersweet chocolate – Heavy cream – Unsalted butter – Baileys Irish Cream – Irish whiskey Baileys Frosting: – Confectioners' sugar – Unsalted butter

 Preheat oven to 350 degrees & line 12-cavity cupcake tin with papers.

Prep Recipe

 Bring stout &  butter to simmer in a large, heavy saucepan over medium heat.

Make Batter

Add cocoa powder & whisk until smooth. Remove saucepan from heat.

In a separate medium bowl, whisk together flour, sugar, baking soda, & salt.

In bowl of a stand mixer or large bowl with hand mixer beat together egg & sour cream. Add chocolate mixture to egg mixture & beat to just combined.

Add dry mixture to wet mixture & mix until just combined, taking care not to over-mix.

Divide batter among cupcake liners, filling them about ¾ of the way.

Bake for 17-20 mins, until a toothpick stuck into center of cupcake comes out clean.

Bake 17-20 mins, until a toothpick in center of cupcake comes out clean. Let cool & core out a small section from the middle.

In a small saucepan, bring cream just to a boil (keep close eye on it & remove from heat right at boiling).

Make Filling

Put chocolate in heat-proof bowl. Pour cream over it & let sit for 1 min. Stir until chocolate is completely melted & smooth.

Add butter, Baileys, & Irish whiskey, & stir to combine.

Spoon Irish whiskey filling into centers of cupcakes.

Fill Cupcakes

Beat butter until it’s fluffy. Add confectioners’ sugar 1 cup at a time & beat until well-combined. Add Baileys & beat.

Make Frosting

Frost cupcakes and add some fun sprinkles.
