Corn Tortilla Quesadillas

While it seems like many quesadillas are made with flour tortillas these days, corn tortillas are actually traditional. And Corn Tortilla Quesadillas are SO good!

Makes: 8 quesadillas Prep Time: 10 mins Cook Time:  20 mins

Ingredients:

– Chili powder – Cumin – Garlic powder – Dried oregano – Paprika – Cayenne – Chicken breasts – Olive oil

– Onion – Bell pepper – Corn – Black beans – Corn tortillas – Shredded cheese  – Salsa, sour cream, avocado, cilantro, etc.

Why Corn Tortillas?

Quesadillas are traditionally made with corn tortillas! But many modern recipes tell you to use flour for a variety of reasons, one being that they're more flexible than corn tortillas. But flexibility isn't a requirement for a quesadilla making & this recipe will show you how to make the perfect Corn Tortilla Quesadilla!

In a small bowl, whisk together chili powder, cumin, garlic powder, oregano, paprika, salt, cayenne, & pepper.

Mix Spices

Rub chicken breasts all over with the spice mixture.

Prep Chicken

Add oil to large skillet over medium heat. Add chicken & cook for 5-7 mins on each side until golden & cooked through.

Cook Chicken

Remove & once cool enough to touch, dice & put in a medium bowl.

Cook Chicken

In the same pan, add onions & peppers. Cook for 3 mins to soften. Add corn & black beans & cook for a min to heat. Add to chicken in bowl & toss to combine.

Cook Veggies

Clean out skillet or heat a griddle to medium. Brush one side of each tortilla with olive oil. Place one in pan & add cheese.

Make Quesadillas

Now add about ½ cup of chicken mixture & sprinkle more cheese on top.

Top with another tortilla oil-side up. Cook for 2-3 mins, until cheese melts & tortilla is crispy.

Use a spatula to flip over & cook for another min or until the second side is crispy.

Place quesadillas on a cutting board & cut into quarters. Serve with sour cream, salsa, avocado, cilantro, & any other toppings you desire.

These Corn Tortilla Quesadillas are absolutely delicious and, in my opinion, taste much better than those made with flour tortillas!
