If you think mojitos are a summer-only cocktail, these Cranberry Mojitos will change your mind! This holiday cocktail is made with homemade cranberry syrup, lime, rum, & lots of mint!
Makes: 4 cocktails Prep Time: 15 mins Cook Time: 15 mins
– Fresh cranberries – Granulated sugar – Water – Mint leaves – Lime juice – Ice – Rum (light) – Soda water
Put cranberries, water, & sugar in a saucepan & bring to a simmer over medium heat.
Lower the heat to a simmer & continue to cook for 10 mins, until berries are just starting to burst.
Remove from heat & pour mixture through a fine mesh strainer over a bowl. Press with the back of a spoon.
Keep syrup in bowl or pour into jar & place in fridge to cool completely before using.
Put about 10 mint leaves & ½ oz lime juice in each glass. With back of a wooden spoon or a muddler mash mint up.
Put ice in each glass and pour 2 oz. of the cranberry syrup and 2 oz. rum into each glass.
Top off each glass with soda water. Sprinkle berries in and add a lime wedge for garnish.
