Mini Buffalo Chicken Tacos

These Mini Buffalo Chicken Tacos are an easy-to-make weeknight dinner or party appetizer (especially for game days!) that are absolutely packed with flavor!

Makes: 12 mini tacos Prep Time: 15 mins Cook Time: 20 mins

Taco Ingredients:

– Garlic powder – Paprika – Salt – Pepper – Chicken breasts – Olive oil – Buffalo sauce – Street taco-size flour tortillas – Blue cheese or shredded cheddar

Blue Cheese Dressing + Toppings Ingredients:

– Blue cheese – Buttermilk – Sour cream or Greek yogurt – Minced garlic – Lemon juice – Pepper – Shredded carrots – Diced avocado – Diced tomatoes

In a small bowl mix together garlic powder, paprika, salt, & pepper & rub on chicken.

Make Chicken

Add olive oil to large skillet over medium. Add chicken & cook for 4–5 mins per side, until cooked through. Let cool slightly.

When chicken is cool enough to touch, use forks (or your hands) to shred.

Put shredded chicken in a bowl & add buffalo sauce. Toss to fully coat chicken in sauce.

Wrap tortillas in a damp paper towel & warm in microwave for 45 seconds to make pliable.

Warm Tortillas

Lightly brush both sides of each tortilla with olive oil & set on a baking sheet. Add chicken to 1/2  of each tortilla. Top with cheese.

Fold tortilla over to form taco, pressing firmly to close and bake at 425 for 6 minutes.

Bake Tacos

Flip each taco & return to oven for another 5-6 mins, until tacos are golden & crispy.

Put all ingredients in a medium bowl & stir together. Chill in fridge for at least an hour before using.

Make Dressing

Serve with blue cheese sauce, extra buffalo sauce, shredded carrots, diced avocado, & diced tomato.
