Soft Lemon Cookies

Makes: 20 cookies Prep Time: 15 mins Bake Time:  15 mins


– Butter – Sugar – Egg + egg yolk – Lemon juice – Lemon zest – Flour – Baking powder

– Baking soda – Salt – Yellow food coloring  (optional) – Confectioners' sugar

Preheat oven to 325 & line two baking sheets with parchment paper or Silpats.

Prep Recipe

Cream together butter & sugar until light & fluffy, 2-3 minutes.

Make Batter

Add egg, egg yolk, lemon juice, & lemon zest & mix until just combined.

In a separate large bowl, whisk together flour, baking powder, baking soda, & salt.

Pour dry ingredients into wet mixture & mix until just combined. Fold in yellow food coloring until well combined, if using.

Place 3 Tbsp sugar in a small bowl & confectioners’ sugar in a separate small bowl.

Roll Cookies

Using about 2 Tbsp dough at a time, roll into balls. Roll each ball in both sugars. Place on prepared baking sheets 2" apart.

Bake cookies for 15-17 mins, until set. They should still be soft.
