Ingredients

  • 8 cups lacinato kale ribs removed and roughly chopped (or kale variety of your choice)
  • Lemon garlic dressing (recipe below) or dressing of your choice
  • ¼ teaspoon salt
  • 6 cups chopped broccoli florets (left raw or steamed and cooled*)
  • cup thinly sliced red onion
  • cup shredded carrots
  • 1 avocado peeled, pitted, and diced
  • cup crumbled feta cheese
  • cup toasted almonds

Lemon Garlic Dressing

  • ¼ cup extra-virgin olive oil
  • 2 tablespoon freshly squeezed lemon juice
  • 1 teaspoon honey
  • ½ teaspoon minced garlic (from 1 clove)
  • ½ teaspoon dijon mustard
  • teaspoon salt
  • Pinch pepper
  • Pinch red pepper flakes

Instructions

  • Put kale in a large bowl and add 2 tablespoon of dressing and ¼ teaspoon salt. Using your hands, gently massage dressing into the kale for a couple minutes to tenderize it.
  • Add broccoli, sliced onion, avocado, feta, and almonds to the kale and toss to combine.
  • Add additional dressing on as desired.

Lemon Garlic Dressing

  • Add all ingredients to a mason jar and shake well to combine. If you don't have a mason jar, you can put everything in a medium bowl and whisk together to combine.

Notes

  • If you opt to steam your broccoli, fill a pot with about 1 inch of water, place the steamer basket in the pot, and bring the water to a boil. Add the broccoli to the steamer basket, cover, and steam for about 3-4 minutes, or until the broccoli is tender but still bright green. If you don't have a steamer basket, just put the broccoli right in the pot with a small amount of water (just enough to cover the bottom) and cover it. Steam for about 3-4 minutes, until tender.
Remove broccoli from pot and immediately dunk in ice water to stop cooking and to cool broccoli quicker. Drain and let cool completely before adding to salad.
