Ingredients
1 ½Ccooked and cooled quinoa
5oz.baby spinachchopped
½Csliced grape tomatoes
2oz.crumbled goat cheese
Caesar dressingsee recipe below
Caesar Dressing:
4anchovy filletsoptional
2clovesgarlicpeeled
1egg yolk
1Tdijon mustard
1½Tfresh squeezed lemon juice
1½Twater
¼C- ½ C extra-virgin olive oil
¼Cgrated parmesan
Instructions
Put quinoa, chopped spinach, tomatoes, and goat cheese in a large bowl.
Toss with Caesar dressing until well coated.
Refrigerate until ready to eat.
Caesar Dressing:
Put anchovies (if using), garlic, egg yolk, dijon mustard, lemon juice, and water in a blender and process for about 30-40 seconds, until the mixture is smooth.
With the blender running, pour the extra virgin olive oil in slowly, until you reach the desired consistency.
Remove dressing to bowl. Stir in the parmesan cheese and ground pepper.
