Mini Cookie Milkshakes

Ingredients

  • 3 cups vanilla ice cream
  • ¾ cup whole milk
  • 18 mini chocolate chip cookies divided (recipe below)
  • ¼ cup chocolate syrup
  • ½ cup Kahlúa (optional)
  • Whipped cream (homemade or store-bought)

Mini Chocolate Chip Cookies (makes 32 mini cookies)

  • ½ cup all-purpose flour
  • 1 ½ teaspoon baking powder
  • teaspoon salt
  • ½ cup (1 stick) unsalted butter room temperature
  • cup granulated sugar
  • cup packed light brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • cup mini chocolate chips

Instructions

  • Put ice cream, milk, 10 mini chocolate chip cookies, and chocolate syrup in a blender. Blend until smooth.
  • Add Kahlúa if using and blend until smooth.
  • Pour the milkshakes into little tiny glasses (see notes section for the kind I used). Top with whipped cream and a mini chocolate chip cookie.

Mini Chocolate Chip Cookies

  • Preheat oven to 350 degrees and line a baking sheet with parchment paper.
  • Whisk flour, baking powder, and salt together in a medium bowl. Set aside.
  • In the bowl of a stand mixer or in a large bowl with a hand mixer, beat together the butter and both sugars until light and fluffy.
  • Add egg and vanilla and beat until smooth.
  • With mixer on low, gradually beat in the flour mixture until just combined (taking care not to over-mix). Fold in the mini chocolate chips.
  • Scoop about a teaspoon of dough onto prepared baking sheet. Flatten each dough ball a little bit.
  • Bake for about 7 minutes, until cookies are just browning at the edges. You still want the cookies to be pretty soft. Cool on the pan for a few minutes before moving to a rack to cool completely.
