Peanut Butter Strawberries

Fresh strawberries meet creamy peanut butter and fun sprinkles in this easy-to-make summer treat. Peanut Butter Strawberries are a delicious alternative to chocolate-covered strawberries and are perfect for parties or after school snacks.

Ingredients

  • 12 large strawberries
  • ½ cup creamy peanut butter (I recommend not using natural)
  • 2 teaspoon coconut oil, optional (see notes)
  • Sprinkles, if desired

Instructions

  • Wash and thoroughly dry strawberries. If they're not completely dry, the peanut butter won't stick to them.
  • Put peanut butter and coconut oil (if using) in a small microwave-proof bowl and place in the microwave for 20 seconds. Stir. You want peanut butter to be thin enough to be able to dip strawberries into it, but not super runny. If peanut butter is still too thick, place back in microwave for 5 second intervals, stirring in between.
  • Hold each strawberry by the stem and dip into the peanut butter, turning to coat all sides.
  • Sprinkle the sprinkles of your choice over the peanut butter and place strawberries on a parchment paper lined baking sheet. Put baking sheet in the fridge for about 20 minutes to let peanut butter harden.

Notes

  • Coconut oil will help peanut butter set and harden a bit more on strawberries, but it's not totally necessary to making these peanut butter strawberries, so don't worry if you don't have any.
  • To store: these strawberries are best enjoyed the day they're made, but if keeping overnight, store in an airtight container with layers of strawberries separated my parchment or waxed paper. Note that strawberries may start to sweat when left in the fridge.
