Ingredients
2ozblanco tequila
1ozpomegranate syrup(homemade with recipe below or store-bought)
1ozfreshly squeezed lime juice
½ozCointreau or triple sec
Coarse salt or sugarfor rimming glass
Pomegranate arils and lime wedgesfor garnish
Pomegranate Syrup
1cup100% pomegranate juice(like POM Wonderful)
¾cupgranulated sugar
Instructions
Brush rim of glass with lime juice or simple syrup and place upside-down on a small plate of coarse salt or sugar to coat rim. Fill glass with ice.
In an ice-filled shaker, combine tequila, pomegranate simple syrup, lime juice, and Cointreau or triple sec. Shake well and pour into prepared glass.
Garnish drink with pomegranate arils and lime wedges if desired.
Pomegranate Syrup
Put pomegranate juice and sugar in a small saucepan and bring mixture to a boil.
Once boiling, lower heat and let simmer for about 10 minutes, until mixture has thickened a bit.
Pour syrup into a bowl or mason jar and place in fridge to cool completely before using. Syrup will continue to thicken as it cools. Syrup will stay fresh in fridge for about a month.
Notes
If you choose to use less syrup in your drink to cut sweetness, I would add a splash of pomegranate juice to keep flavor (make sure it's 100% juice with no sugar added). You can also feel free to add more syrup if you like a sweeter margarita.
