Pomegranate Margarita

This easy Pomegranate Margarita features the ideal balance of tequila, fresh lime juice, and sweet-tart pomegranate syrup. It mixes up in minutes and adds a beautiful seasonal twist to a classic cocktail, making it perfect for the holidays.

Ingredients

  • 2 oz blanco tequila
  • 1 oz pomegranate syrup (homemade with recipe below or store-bought)
  • 1 oz freshly squeezed lime juice
  • ½ oz Cointreau or triple sec
  • Coarse salt or sugar for rimming glass
  • Pomegranate arils and lime wedges for garnish

Pomegranate Syrup

  • 1 cup 100% pomegranate juice (like POM Wonderful)
  • ¾ cup granulated sugar

Instructions

  • Brush rim of glass with lime juice or simple syrup and place upside-down on a small plate of coarse salt or sugar to coat rim. Fill glass with ice.
  • In an ice-filled shaker, combine tequila, pomegranate simple syrup, lime juice, and Cointreau or triple sec. Shake well and pour into prepared glass.
  • Garnish drink with pomegranate arils and lime wedges if desired.

Pomegranate Syrup

  • Put pomegranate juice and sugar in a small saucepan and bring mixture to a boil.
  • Once boiling, lower heat and let simmer for about 10 minutes, until mixture has thickened a bit.
  • Pour syrup into a bowl or mason jar and place in fridge to cool completely before using. Syrup will continue to thicken as it cools. Syrup will stay fresh in fridge for about a month.

Notes

  • If you choose to use less syrup in your drink to cut sweetness, I would add a splash of pomegranate juice to keep flavor (make sure it's 100% juice with no sugar added). You can also feel free to add more syrup if you like a sweeter margarita.
