In a large mixing bowl, combine all ingredients, gently mixing until just combined. Take care not to over-mix; some lumps in batter are OK. Let batter rest for about 2 minutes.
Heat a griddle or skillet or medium heat. Brush some butter on the griddle.
Scoop about ΒΌ cup batter onto hot griddle or skillet and cook pancakes until bubbles start to form, about 1 Β½ minutes. Flip and cook for another 1 Β½ minutes or until golden.
Serve pumpkin pancakes with butter and maple syrup.
