Pumpkin Pancakes with Pancake Mix

Making pumpkin pancakes with pancake mix couldn't be easier! Just add pumpkin puree and pumpkin pie spice to your boxed mix and whip up a batch of fluffy pumpkin pancakes that taste like fall with every bite.
Exact recipe will depend on the type of pancake mix you're using, so be sure to follow the box instructions and add pumpkin puree and pumpkin pie spice as directed in notes section.

Ingredients

Bisquick Pancake Mix {classic pancake mix}

  • 2 cups pancake mix
  • 2 large eggs
  • 1 cup milk
  • β…” cup pumpkin puree
  • 2 teaspoon pumpkin pie spice

Krusteaz Buttermilk Pancake Mix {complete pancake mix}

  • 1 cup pancake mix
  • β…” cup water
  • β…“ cup pumpkin puree
  • 1 teaspoon pumpkin pie spice

Instructions

  • In a large mixing bowl, combine all ingredients, gently mixing until just combined. Take care not to over-mix; some lumps in batter are OK. Let batter rest for about 2 minutes.
  • Heat a griddle or skillet or medium heat. Brush some butter on the griddle.
  • Scoop about ΒΌ cup batter onto hot griddle or skillet and cook pancakes until bubbles start to form, about 1 Β½ minutes. Flip and cook for another 1 Β½ minutes or until golden.
  • Serve pumpkin pancakes with butter and maple syrup.

Notes

If you have a box of pancake mix not shown here, just follow box instructions and add pumpkin puree and pumpkin pie spice. As a general rule of thumb, for recipes that use:
1 cup pancake mix: add β…“ cup pumpkin puree and 1 teaspoon pumpkin pie pice
2 cups pancake mix: add β…” cup pumpkin puree and 2 teaspoon pumpkin pie spice
*note that my Bisquick box didn't call for vegetable oil, but some call for 2 Tbsp. You can add in for extra moistness if you want.
