Watermelon Refresher

Fresh watermelon, lime juice, coconut water (or plain water) and a little sweetener combine to make this stunningly delicious Watermelon Refresher. Perfect for enjoying on a hot summer day, it's easy to make and will be loved by both kids and adults!

Ingredients

  • 1 heaping cup cubed watermelon
  • ½ cup ice
  • ½ cup coconut water or plain water
  • 1 tablespoon simple syrup or agave or honey (see notes)
  • 1 tablespoon freshly squeezed lime juice
  • Watermelon slice and lime wedge for garnish, optional

Instructions

  • Put cubed watermelon in blender and process until pureed. You should get about ¾ cup of watermelon juice.
  • Place a fine mesh strainer over a large bowl and pour watermelon juice in to strain out any pulp, seeds, or foam.
  • In an ice-filled cocktail shaker, add watermelon juice, coconut water (or plain water), simple syrup (or agave or honey), and lime juice. Shake well.
  • Pour entire contents of shaker (ice included) into a glass. Add a slice of watermelon and a lime wedge for garnish and enjoy!

Notes

  • You can use less simple syrup if you want, especially if your watermelon is already quite sweet. Or you can use more if you like a sweeter drink. If using agave or honey, about 1 ½ teaspoon agave or 2 teaspoon of honey should be equivalent. I recommend mixing the honey in a little warm water first to help it incorporate into the drink better.
