Sweet Potato Chili
Comfort food chili that's incredibly delicious and also healthy? Yes! This vegetarian Sweet Potato Chili is packed with so much flavor, you might not believe it's healthy.... But it is!
Makes: 6 servings Prep Time: 15 mins Cooking Time: 40 mins
– Olive oil – Onion – Garlic – Red bell pepper – Jalapeño – Chili powder – Ground Cumin – Dried oregano – Salt – Pepper – Sweet potatoes
– Water – Diced tomatoes – Tomato paste – Black beans – Kidney beans – Cilantro, for garnish – Avocado, for garnish – Sour cream, for garnish
Chop sweet potatoes into ½" cubes & dice onions, red pepper, & jalapeño.
Heat oil in large dutch oven & add onion & garlic. Cook until onions are translucent. Stir in red pepper and jalapeño & cook for 10 more mins.
Stir in chili powder, cumin, oregano, salt, & pepper & cook for another two mins.
Add sweet potatoes, water, diced tomatoes, tomato paste, black beans, & kidney beans to saucepan. Bring mixture to a boil.
Add Sweet Potato
Once boiling, lower to a simmer, cover, & cook it until the sweet potatoes are tender, about 25 mins.
Serve & garnish with avocado & cilantro if desired.
