White Chicken  Chili

Looking for the best kind of cold weather comfort food? White Chicken Chili is so easy to make and is both healthy and satisfyingly delicious!

Makes:  6 servings Prep Time: 20 mins Cook Time: 40 mins


– Olive oil – Diced onion – Diced jalapeño – Minced garlic – Cumin – Shredded white meat chicken – Chopped green chiles (canned) – Cannellini beans (canned)

– Low-sodium chicken broth – Dried oregano – Salt & pepper – Cornmeal – Milk – Cheese, for topping – Avocado, for topping

Heat olive oil in a a large stockpot over medium. Add onion & jalapeño & sauté until tender, about 5-8 mins. Add in garlic & cumin & sauté until fragrant, about one min.

Cook Onion & Pepper

Add shredded chicken, green chiles, beans, chicken stock, oregano, salt & pepper to the pot. Bring mixture to a boil, reduce heat, & let simmer for 20 mins.


In a separate small bowl, mix together the cornmeal & milk.

Mix Cornmeal

Mix cornmeal into chili. Let simmer for another 10 mins to thicken.

Cook to Thicken

 Serve chili topped with shredded cheddar, sliced avocado, & anything else desired!
