Ingredients

Blood Orange Syrup

  • 1 cup water
  • 1 cup granulated sugar
  • ¼ cup blood orange peel from about 1 orange (make sure to remove all white pith)
  • ¼ cup blood orange juice from about 2 oranges

Instructions

  • Spoon about 2 ounces of blood orange syrup into each glass.
  • Add about a cup of ice cream into each glass and fill to the brim with soda water. 
  • Serve ice cream sodas with straws and blood orange granishes.

Blood Orange Syrup

  • Put water, sugar, blood orange peel, and blood orange juice in a medium saucepan and bring to a boil.
  • Once boiling, lower heat and let mixture simmer for about 10 minutes, until syrup has thickened (note that it will continue to thicken as it cools).
  • Strain syrup into a bowl, leaving the orange peel behind.
  • Keep syrup in bowl or pour into a mason jar and place in fridge to cool completely before using.

Notes

  • The blood orange simple syrup will make about 4 ice cream sodas. You can easily double or triple the recipe and blood orange simple syrup will keep in your fridge in an airtight container for about a month.
