Carrot Cake Mix Cookies

Love carrot cake, but craving cookies? These easy Carrot Cake Mix Cookies are made with just a box of carrot cake mix and two other ingredients! The quick foolproof cookies can be decorated however you want and are the perfect way to welcome spring.

Ingredients

  • 1 13.25 oz. box carrot cake mix (see notes if your box is 15.25 oz.)
  • 10 Tbsp (1 ¼ sticks) unsalted butter
  • 1 large egg + 1 large egg white
  • Cream cheese frosting optional for topping
  • Ground cinnamon optional for topping
  • Grated carrots optional for topping

Instructions

  • Preheat oven to 350 degrees and line two baking sheets with parchment paper.
  • In the bowl of a stand mixer or in a large bowl with a hand mixer, cream the butter until light and fluffy, 2-3 minutes (if you don't have a mixer, you can use a bowl and wooden spoon/spatula).
  • Mix whole egg and egg white into the butter until combined (don't worry if your mixture looks a little runny/clumpy).
  • Add the carrot cake mix to the butter mixture and mix until just combined, taking care not to over-mix.
  • Scoop about 2 tablespoon of cookie dough (I use a #40 cookie scoop) onto the prepared baking sheets.
  • Bake for 9-11 minutes, until cookies are just turning golden around the edges, but are still soft. Let cookies cool in the pan for a couple minutes before moving to a wire rack to cool completely.
  • When cookies are cooled, frost with cream cheese frosting and top with ground cinnamon and/or grated carrots if desired.

Notes

  • If your cake mix box is 15.25 oz. I recommend using about 11 ½ tablespoon of butter instead of 10 Tbsp.
