Don't get me wrong; I love making cookies from scratch. But there's also something so satisfying about making them with a box of mix. Especially for a more complicated cookie like a carrot cake cookie.
Instead of getting out all kinds of spices and ingredients, you only need 3 ingredients for these cookies. THREE.
Though, of course, I also recommend slathering them in a cream cheese frosting. And sprinkling on some cinnamon. And maybe some grated carrots, too. But those ingredients are absolutely not required.
These carrot cake mix cookies are the perfect easy Easter baked good, but are also deliciously appropriate all spring (and really all year) long.

I have several cake mix cookie recipes on my blog and they're all very similar, though you do need to take care to pay attention to the size of the box mix you're using.

You only really need 3 ingredients for this recipe. But there are also a few optional ingredients to jazz the carrot cake mix cookies up a bit!
Here's everything recommend (be sure to view the recipe card at the bottom of this post for ingredient amounts and full recipe instructions):
- 13.25 oz. box carrot cake mix (can also use a 15.25 oz. box)
- Unsalted butter
- Large Egg + large egg white
- Cream cheese frosting: optional for topping
- Ground cinnamon: optional for topping
- Grated carrots: optional for topping
This is the box of carrot cake mix I usually use. It's a 13.25 oz. box, but I also share how to make the cookies with a 15.25 oz. box, which is the other common box cake mix size.
🍪 How to make carrot cake mix cookies
It really couldn't be any easier to make cookies with boxed cake mix! I like to make mine in my stand mixer, but if you don't have one, you can use a hand mixer or just a bowl and a wooden spoon or spatula.
Start by preheating your oven to 350 degrees and lining baking sheets with parchment paper. This recipe makes about 16 cookies, so you'll likely need two baking sheets or to do two batches of cookie baking.
Cream the butter until it's light and fluffy. This will likely take about 2-3 minutes with an electric mixer.
If your cake mix box is 15.25 oz. I recommend using about 11 ½ tablespoon of butter instead of the 10 tablespoon you use with a 13.25 oz. box.
Now, mix the whole egg and the egg white into the butter until it's combined.
Your mixture will likely look a little runny/clumpy, so don't worry. Typically when you make cookies, you'd beat the butter with sugar, but since the cake mix already has a lot of sugar in it, you don't want to add more here.
Add the carrot cake mix to the butter mixture and mix until just combined, taking care not to over-mix.
And your cookie dough is done!
Scoop about 2 tablespoon of cookie dough (I use a #40 cookie scoop) onto the prepared baking sheets.
And bake for 9-11 minutes, until cookies are just turning golden around the edges, but are still soft.
Let the cookies cool in the pan for a couple minutes before moving to a wire rack to cool completely.
I love that these pretty cookies were made with a box of cake mix!
Obviously you can eat the carrot cake mix cookies as is. Or you can jazz them up a bit!
I like to spread a cream cheese frosting over them. You can use a store-bought frosting or use this recipe for homemade cream cheese frosting.
You can also sprinkle a little ground cinnamon over the tops of the cookies.
You can even grate some fresh carrots over the top for a pop of color. I do recommend grating the carrots right before serving the cookies as it can start to turn brown after some time.
Even with no frosting and no additional toppings, these carrot cake mix cookies are so moist and sweet and delicious!

When your cookies are completely cooled, it's best to store them in an airtight container at room temperature. When stored properly, they should keep fresh for about 5 days.
If you have cream cheese frosting on your cookies, it is recommended that you keep the cookies in an airtight container in the fridge. They should keep fresh for about a week in the fridge.

Carrot Cake Mix Cookies
Ingredients

- 10 Tbsp (1 ¼ sticks) unsalted butter
- 1 large egg + 1 large egg white
- Cream cheese frosting optional for topping
- Ground cinnamon optional for topping
- Grated carrots optional for topping
Instructions
