Put a small layer of whipped cream on the bottom of your cup (about ¾ inch). Top with about 2 tablespoon chocolate cookie crumbs. Optional: drizzle mocha sauce on top of the whipped cream, too.
Add milk, mocha sauce, espresso/coffee, mini chocolate chips, simple syrup, xanthan gum, and ice to blender and process until smooth and frothy.
Pour Frappuccino into cup and top with whipped cream, additional mocha sauce, and remaining chocolate cookie crumbs.
