Starbucks recently made a lot of cuts to their Frappuccino menu and lots of popular drinks were removed from the permanent menu. Luckily, fan favorite Mocha Cookie Crumble remains.
So, while you can still purchase this delicious layered Frappuccino from your local
Much like the Caramel Ribbon Crunch Frappuccino, there's some debate even amongst baristas on how to make it, but after lots of information gathering, I've come up with the perfect copycat recipe.
🧋 What is the Mocha Cookie Crumble Frappuccino?
The Mocha Cookie Crumble Frappuccino is one of
It's a coffee-based Frappuccino that features whipped cream and cookie crumbles on the bottom, a mocha Frappuccino mixture in the middle and whipped cream, mocha sauce, and more cookie crumbles on top.
One of the biggest debates is over whether this drink is supposed to have cookie crumbs and mocha sauce on the bottom or just cookie crumbs. The website (and the barista recipe card) say just cookie crumbles.
But since the Caramel Ribbon Crunch Frappuccino get caramel crunch and caramel sauce on the bottom, lots of people are confused. Some baristas even say they always put the sauce on the bottom!
Some people say that the recipe has changed over the years, but others say it's just confusing.
The good thing about making the Mocha Cookie Crumble Frappuccino at home is that you can make it however you like it best!
🗒 Ingredients
Here's everything you need to make the Frappuccino (be sure to view the recipe card at the bottom of this post for ingredient amounts and full recipe instructions):
- Whipped Cream
- Mocha sauce: you can make your own (follow the recipe in this post) or buy a bottle of mocha sauce.
- Chocolate cookie crumbs: I use Oreo cookies, but you can use whatever you like.
- Whole milk
- Espresso or strongly brewed coffee
- Mini chocolate chips
- Simple syrup: I use vanilla syrup, but you can also use plain.
- Xanthan gum: this ingredient helps thicken the Frappuccino and really does make a difference. You can substitute with cornstarch, but you will need to use a little bit more.
- Ice

Part of what makes this Frappuccino unique is that it has a layer of whipped cream and cookie crumbles on the bottom of it.
Of course, you can also add mocha sauce if you want. In fact, I recommend it. You might want to see how the baristas at your local
To make it as close as possible to the "official" recipe, I recommend putting a small layer of whipped cream on the bottom of the cup (about ¾ inch) and then topping with about 2 tablespoon of crushed chocolate cookies.
And then whip up the Frappuccino portion.
It consists of milk, mocha sauce, espresso or coffee, mini chocolate chips (these are the "Frappuccino" chips), simple syrup, xanthan gum, and ice.
Starbucks only uses 3 pumps of mocha sauce in the grande version of this drink, which equates to only .75 ounces. I think the at-home version needs slightly more, so I add a full ounce.
Put it all in a blender and process until smooth and frothy.
Then pour the Frappuccino mixture over the whipped cream cookie bottom.
And top with more whipped cream, mocha sauce, and cookie crumbles.

There are so many different ways you can make this drink to suit it to your precise tastes or the ingredients you have on hand. Here are some ideas:
- If you want to add mocha sauce on the bottom of the drink, do it! I personally like the drink best this way and have noticed my local baristas generally do add it.
- Use any kind of chocolate cookies you want. I actually used Java Chip Oreo cookies here (how appropriate!), but you can use any flavor. You can even try Golden Oreo cookies for a fun vanilla twist!
- You can omit the espresso if you don't want caffeine or you don't like it (though the mocha flavors disguise it quite well in this drink). Of course, you can also add more if you want.
- Feel free to make the drink with any type of milk or dairy-free alternative that you want. Each type will result in a slightly different consistency (Starbucks uses whole milk, which is why I do, too). You can even use a chocolate cold foam or vanilla sweet cream for added sweetness and flavor.
- Starbucks doesn't add flavored syrup to their Frappuccino, BUT they add "Frappuccino roast," which is essentially a sweet coffee syrup. I do recommend adding the syrup in for sweetness and and while plain works just fine, you are welcome to use any flavor.
- I know lots of people who like to line the cup with mocha sauce before pouring the Frappuccino in.
- Incorporate caramel sauce into the drink by adding on layer on the bottom of the cup, lining the cup with it, or drizzling it over the whipped cream.
However you choose to make it, you never have to worry about

Mocha Cookie Crumble Frappuccino
Ingredients
- Whipped Cream
- 3 tablespoon Chocolate cookie crumbs divided
- ¾ cup (6 oz) whole milk
- 2 Tbsp (1 oz) mocha sauce plus more for drizzling (store-bought or with recipe linked in notes section)
- ¼ cup (2 oz) espresso or strongly brewed coffee
- 1 ½ tablespoon mini chocolate chips
- 1 ½ Tbsp (¾ oz) simple syrup (I use vanilla, but you can also use plain)
- ¼ teaspoon xanthan gum (can substitute with cornstarch, but use a little bit more)
- ¾ cup ice
Instructions
- Put a small layer of whipped cream on the bottom of your cup (about ¾ inch). Top with about 2 tablespoon chocolate cookie crumbs. Optional: drizzle mocha sauce on top of the whipped cream, too.
- Add milk, mocha sauce, espresso/coffee, mini chocolate chips, simple syrup, xanthan gum, and ice to blender and process until smooth and frothy.
- Pour Frappuccino into cup and top with whipped cream, additional mocha sauce, and remaining chocolate cookie crumbs.
