Pizza Cupcakes

Pizza Cupcakes take all the delicious flavor of homemade pizza and transform it into bite-sized delights. You can use whatever toppings you want for these mini pizzas and they make the perfect game day appetizer or a fun dinner for kids!

Ingredients

  • ¾ lb pizza dough store-bought or homemade*
  • cup pizza sauce
  • ¾ cup shredded cheese (mozzarella, cheddar, or your favorite blend)
  • cup mini pepperoni (or regular pepperoni chopped)
  • teaspoon dried basil optional
  • teaspoon red pepper flakes optional

Instructions

  • Preheat oven to 450 degrees and lightly brush a 12-cavity cupcake tin with olive oil or cooking spray.
  • On a lightly floured surface, roll out the pizza dough to about ¼" thickness. Cut out 12 circles roughly 3-inches in diameter. You can use a circle cookie cutter, a drinking glass, etc. Re-roll dough scraps when necessary.
  • Gently press dough circles into the bottoms of the tin, going up the sides.
  • Spoon about 1 ½ teaspoon of pizza sauce into each dough cup. Sprinkle with about 1 tablespoon of shredded cheese and 4-5 mini pepperonis. Top with dried basil and red pepper flakes, if desired.
  • Put in oven and bake for about 10-12 minutes, until cheese is bubbling and edges of dough are turning golden.
  • Let cool for a couple minutes before enjoying!

Notes

  • If you have a full pound of dough, you can make roughly 4 additional pizza cupcakes. Just be sure you have a bit more of the toppings!
