Ingredients

  • 1 ½ cups old-fashioned oats
  • ½ cup pumpkin puree
  • ¼ cup almond butter
  • cup finely chopped pistachios
  • ¼ cup ground flaxseed
  • ¼ cup maple syrup (can substitute with honey)
  • 1 ½ tablespoon chia seeds
  • 1 ½ tablespoon fall sprinkles, optional
  • 1 teaspoon vanilla extract
  • ¼ teaspoon ground cinnamon
  • teaspoon ground nutmeg
  • teaspoon ground ginger

Instructions

  • Add all ingredients to a large bowl and mix together until well combined (you can use a stand mixer if you have one).
  • Roll the mixture into golf ball-sized balls.
  • Place energy bites in an airtight container and keep stored in the fridge for 7-10 days. You can store in the freezer for about 6 months.
