Combine old-fashioned oats, graham cracker crumbs, and chia seeds in a large bowl. Mix in Greek yogurt and milk until well-combined.
In a separate medium bowl, lightly mash chopped strawberries with a potato masher or fork. Mix in softened cream cheese, honey, and vanilla extract until mixture is mostly smooth.
Layer oat mixture and strawberry cheesecake mixture in two 8 oz. mason jars. Refrigerate overnight, or for at least 8 hours.
When ready to enjoy, top jars with more graham cracker crumbs, if desired.
