Ingredients

  • cup old-fashioned oats
  • ¼ cup graham cracker crumbs (from about 2 sheets), plus more for topping
  • 1 tablespoon chia seeds
  • cup Greek yogurt
  • ½ cup milk (or dairy/dairy substitute of your choice)
  • 1 cup diced strawberries
  • 3 tablespoon cream cheese softened
  • 1 tablespoon honey
  • ½ teaspoon vanilla extract

Instructions

  • Combine old-fashioned oats, graham cracker crumbs, and chia seeds in a large bowl. Mix in Greek yogurt and milk until well-combined.
  • In a separate medium bowl, lightly mash chopped strawberries with a potato masher or fork. Mix in softened cream cheese, honey, and vanilla extract until mixture is mostly smooth.
  • Layer oat mixture and strawberry cheesecake mixture in two 8 oz. mason jars. Refrigerate overnight, or for at least 8 hours.
  • When ready to enjoy, top jars with more graham cracker crumbs, if desired.

Notes

  • As long as your container is air-tight, you can store overnight oats in fridge for up to 5 days.
