You don't need too many ingredients for this overnight oats recipe. They have all the delicious components of a sweet strawberry cheesecake, but with added oats and chia seeds and honey as the sweetener.

- Old-fashioned oats
- Graham cracker crumbs
- Chia seeds
- Greek yogurt
- Milk: or dairy/dairy substitute of your choice
- Diced strawberries
- Cream cheese
- Honey
- Vanilla extract
🍓 How to make strawberry cheesecake overnight oats
My other favorite thing about overnight oats is how easy they are to make!
And the fact that you do it the day or evening before, so you can just grab them and go when you're ready for breakfast.
Start by combining old-fashioned oats, graham cracker crumbs, and chia seeds in a large bowl.
Stir in milk and Greek yogurt.
I like to almond milk because it's what we most often have in the fridge, but you can use any dairy or non-dairy alternative that you choose. I've even made overnight oats with eggnog!
Now, in a separate medium bowl, lightly mash the chopped strawberries with a potato masher or fork.
And mix in the softened cream cheese, honey, and vanilla extract until mixture is mostly smooth.
Layer the oat mixture and strawberry cheesecake mixture in two 8 oz. mason jars. I like to use these jelly jars.
And pop in the fridge overnight or for at least 8 hours.
The oats will soften as they marinate in the mixture. And the strawberry, cream cheese, and graham cracker flavors will spread throughout the jars to make your breakfast oats taste just like strawberry cheesecake.
So, when you grab your jar in the morning, you'll feel like you're eating a decadent dessert.
But it's really a breakfast packed with whole grains, dairy, and fruit.
OK, and maybe some graham crackers and cream cheese, too. Worth it.
I do like to top the jars with some more crushed graham crackers and fresh strawberries in the morning.
I've made these strawberry cheesecake overnight oats quite a few times recently and my husband gets so excited whenever he sees them in the fridge in the evening.
And I get excited when I remember them in the fridge in the morning because they mean breakfast is going to be SO easy and SO delicious.
⏲️ How to store
Of course you'll want to store the strawberry cheesecake overnight oats in the fridge overnight.
But you can actually store them up to 5 days in the fridge. So, you can make a whole week's worth on a Sunday (just double, triple, etc. the recipes for each mixture and divide into jars) and have an easy breakfast all week long!
You do want to make sure you keep the jars sealed or to keep the overnight oats mixture in an airtight container to preserve freshness.
I don't do a lot of meal prep, but breakfast for the whole week in just a few minutes sounds like the best deal ever.
🎉 Variations on recipe
I love this recipe because I think it's the perfect combination of nutritious and indulgent, but there are a lot of ways you can alter it to make these oats your own.
Here are some ideas:
- If you want a less sugar version, you can omit the graham cracker crumbs and either omit or reduce the amount of honey used.
- Feel free to use any fruit you have on hand. Blueberry cheesecake overnight oats, raspberry cheesecake overnight oats, and banana cheesecake overnight oat would all be delicious! I want to try peaches, too.
- I use full-fat or 1% Greek yogurt and regular cream cheese in this recipe, but you can use nonfat yogurt and reduced-fat cream cheese (also known as Neufchatel) in the recipe if you prefer.
- If you don't have chia seeds, you can leave them out. And you can add other grains if you prefer, like quinoa, bulgur, or amaranth.
- Mix in any other complementary add-ins, like coconut flakes, chocolate chips, almonds, walnuts, or peanut butter.
- Mix protein powder into the oat mixture.
- Use Manuka honey for extra benefits.

Ingredients
- ⅔ cup old-fashioned oats
- ¼ cup graham cracker crumbs (from about 2 sheets), plus more for topping
- 1 Tbsp chia seeds
- ⅓ cup Greek yogurt
- ½ cup milk (or dairy/dairy substitute of your choice)
- 1 cup diced strawberries
- 3 Tbsp cream cheese softened
- 1 Tbsp honey
- ½ tsp vanilla extract
Instructions
