  • ⅓ cup Velvet Mascarpone Cold Foam recipe below
  • Cocoa Cookie Dusting recipe below

Velvet Mascarpone Cold Foam

  • 3 tablespoon mascarpone cheese (softened) OR 3 teaspoon instant vanilla pudding mix
  • 2 ½ tablespoon vanilla syrup (store-bought or homemade with recipe linked in notes)
  • ⅓ cup 2% milk
  • ¼ cup heavy cream

Cocoa Cookie Dusting

  • ¼ cup crushed cookies like lady fingers, vanilla cookies, or shortbread
  • 1 tablespoon unsweetened cocoa powder
  • 1 teaspoon instant espresso powder

Instructions

  • Drizzle the mocha sauce around the inside of the glass rim.
  • Add ice to prepared glass and pour in cold brew. Stir in vanilla syrup.
  • Top drink with velvet mascarpone cold foam. Sprinkle cookie crumbs on top and then sift a dusting of the cocoa/espresso mixture over it.

Velvet Mascarpone Cold Foam

  • If using real mascarpone cheese, in a mason jar or other airtight container, whisk together mascarpone and vanilla syrup until completely smooth. Add milk and cream to the container and shake vigorously to combine.
  • If using instant pudding mix, simply add milk, cream, vanilla syrup, and pudding mix to a jar or other airtight container and shake vigorously to combine.
  • This is your mascarpone cold cream... Keep it in the fridge until you're ready to turn it into cold foam right before using.
  • To turn into foam, you can either use an electric frother, hand mixer, or blender with about ⅓ cup of the cold cream at a time. Alternatively, you can shake the mixture vigorously in a mason jar until it's frothy.

Cocoa Cookie Dusting

  • Crush cookies finely. Set aside.
  • In a separate small bowl, whisk together cocoa powder and espresso powder until well combined.

Notes

  • Cold foam recipe should make enough for about 2 drinks. Turn it into cold foam in batches and keep the leftover sweet cream in an airtight container in your fridge until ready to use.
