There's not much my husband loves more than an Italian sub. Until now. Because once I discovered the chopped Italian sandwich trend on TikTok, it quickly became the only way we want our Italian subs around here.
Not only do they look so much more appealing, but the flavors are so much better in this chopped version!
I had so much fun making these chopped Italian sandwiches and they've become a new lunch staple in our house.

While the chopped sandwich takes a little bit more time to make than the standard Italian sandwich, it's still incredibly easy to make. And once you have everything all chopped, you can store it in an airtight container and enjoy a chopped Italian sandwich any time.

Everyone makes their Italian sandwiches a little bit different and one of the great things about this recipe is that it's easy to make substitutions and customize it precisely to your tastes.
Here's what I include in my chopped Italian sandwiches, but I also have more ingredient recommendations for you later in this post (and be sure to view the recipe card at the bottom of this post for ingredient amounts and full recipe instructions):
- Shredded lettuce
- Red onion
- Tomato
- Pepperoccini: or spicy peppers of your choice
- Salami
- Capicola
- Prosciutto
- Provolone cheese
- Mayonnaise
- Extra-virgin olive oil
- Red wine vinegar
- Dried oregano
- Salt & pepper
- Small sub rolls
👩🍳 How to make a chopped Italian sandwich
And making the sandwiches are SO easy. Just start layering your ingredients on a large cutting board.
Lettuce, onions, pepperoccini, and tomatoes...
And the meats! I used three of my favorites: prosciutto, salami, and capicola.
And provolone cheese.
And then, using a sharp knife, chop everything up.
There's something therapeutic about chopping all those ingredients.
You can chop them however small you like, but you definitely want them to be bite-sized pieces.
Then add on the mayo, olive oil, red wine vinegar, oregano, salt, and pepper.
How much mayonnaise you use is totally up to you. I tend to keep things lighter with about 2 tablespoon since I like the creaminess it brings, but don't love a lot of it. But you can, of course, add more if you want!
I keep this all on my big cutting board, but you can also transfer everything to a big bowl if you prefer.
And toss all the ingredients together until well-coated.
And fill your sub rolls with that delicious mixture. I use small rolls and with the amount of ingredients listed in my recipe card, I can fully load about six of them with the filling.
Yes! These chopped Italian sandwiches are SO much tastier than the typical Italian sub with just meat, cheese, and veggies layered inside.
And don't they look so much more fun??
Not only are these sandwiches perfect for every day lunch, but they're also great to serve at parties. You can even serve slider rolls or other small buns to turn them into finger sandwiches!
⏲️ How to make ahead
If you love the idea of a chopped Italian sandwich, but don't have time to make lunch during the week, you can make the chopped mixture and store it in an airtight container in the fridge.
Then you can stuff it in your sub roll when you're ready to eat.
If possible, I do recommend leaving out the mayo, red wine vinegar, and olive oil until you're ready to serve the mixture. But even if you add it in; you can still store the filling - it might just get a little soggier a little quicker.

Chopped Italian Sandwich
Ingredients
- 2 ½ cups shredded lettuce
- ¼ large red onion sliced
- 1 large tomato sliced
- ¼-1/2 cup pepperoccini (optional)
- 5 oz. salami
- 5 oz. cappicola
- 5 oz. prosciutto
- 4 oz. provolone cheese
- 2 Tbsp-⅓ cup mayonnaise (depending on how creamy you want your sandwich)
- 1 tablespoon extra-virgin olive oil
- 1 tablespoon red wine vinegar
- ½ teaspoon dried oregano
- ¼ teaspoon salt
- ¼ teaspoon pepper
- 6 small sub rolls
Instructions
- On a large cutting board, stack lettuce, sliced onion, sliced tomatoes, pepperoccini, salami, capicola, prosciutto, and cheese.
- Using a sharp knife, chop everything into small, bite-sized pieces.
- Top with mayo, olive oil, red wine vinegar, oregano, salt, and pepper and mix together (you can continue to do this on the cutting board or put everything in a bowl to combine).
- Evenly distribute into the 6 small sub rolls and enjoy!

- You can store leftover filling in an airtight container in the fridge. If you can, wait to mix in mayo, red wine vinegar, and olive oil until right before serving.
