That's what happened with the new Cinnamon Crumble Oatmilk Frappuccino. So, I gathered all my ingredients and started testing recipes immediately. But when the new summer drink release day arrived, the cinnamon Frappuccino was nowhere in sight.

Frappuccinos are easy to make at home with a few basic ingredients. For this one, I made my own toasted cinnamon syrup and then added everything to a blender and blended away. Easy peasy!
🗒 Ingredients

Based on the ingredients, this is my closest guess as to how the Cinnamon Crumble Oatmilk Frappuccino should be made. Once the drink is officially available for purchase, I will, of course, try it and tweak this recipe if needed.
Here's everything you need for the Frappuccino (be sure to view the recipe card at the bottom of this post for ingredient amounts and full recipe instructions):
- Oat milk: I like to use barista-style or extra creamy
- Strongly brewed coffee: you can also use espresso if preferred. I personally love using Starbucks Espresso Roast Coffee
- Toasted cinnamon syrup: I share my recipe in this post. It doesn't appear that there's a toasted cinnamon syrup you can purchase, but you can use a regular cinnamon syrup if you prefer
- Xanthan gum: this helps thicken the Frappuccino. If you can't find it, you can substitute with cornstarch, but you'll need to use a little bit more
- Ice
- Vanilla cookies: like Golden Oreo or Nilla Wafers
- Ground cinnamon
- Nondairy whipped cream: you can use regular whipped cream if you prefer, but only if you can have dairy, of course
And if you're making the toasted cinnamon syrup from scratch, here's what you need:
- Cinnamon sticks
- Water
- Brown sugar
- Granulated sugar
👩🍳 How to make toasted cinnamon syrup
First up, you'll want to make the toasted cinnamon syrup. And that means toasting your cinnamon sticks!
I like to toast mine in a cast iron skillet, but you can also pop them in the oven (or toaster oven) if you prefer.
Allow the cinnamon sticks to toast for about 3-5 minutes, turning them occasionally with tongs to ensure they're toasting evenly.
Let them toast until they're starting to darken and get fragrant. I love that toasted cinnamon smell in my kitchen!
Now, put water, brown sugar, granulated sugar, and cinnamon sticks in a medium-size saucepan.
Bring mixture to a boil.
Once boiling, lower the heat and let the mixture simmer for about 10 minutes, until syrup has thickened.
Note that it will continue to thicken as it cools.
Remove from heat and strain cinnamon sticks out of syrup into a heat-proof bowl or mason jar.
Place bowl or jar in fridge to cool completely before using.
You've gotta taste that toasted cinnamon syrup before using it. It's so fragrant and delicious. And there are SO many ways you could use it!
🍦 How to make Cinnamon Crumble Oatmilk Frappuccino
Now that your syrup is ready, you're ready to whip up the Frappuccino.
According to
I used Golden Oreo cookies (with the creme removed), but Nilla Wafers would work well, too. And just mixed them in a bowl with ground cinnamon.
Then I added my Frappuccino ingredients to a blender: oat milk, strongly brewed coffee, toasted cinnamon syrup, xanthan gum, and ice.
And I processed it until the mixture was nice and smooth and frothy.
The xanthan gum really helps the mixture froth up and gives it the consistency of an actual

And top it with whipped cream and the cinnamon crumble topping.

As a serious cinnamon lover, I am absolutely in love with this new, hopefully soon-to-be-released Frappuccino.

🎉 How to customize
One of the best things about making
Here are some recommendations on how you can customize the Cinnamon Crumble Oatmilk Frappuccino:
- If you want the drink to have more cinnamon flavor and to be sweeter, you can certainly add more cinnamon syrup. If you want less sugar, you can use less syrup, but you may want to sprinkle in some ground cinnamon to keep that prominent cinnamon flavor.
- The oat milk goes really well with the cinnamon flavor, but you can use any kind of dairy or nondairy alternative that you want in this cinnamon Frappuccino. Coconut milk would be delicious, as would almond milk, soy milk, or regular dairy milk.
- If you don't want to make your own toasted cinnamon syrup, you can use store-bought regular cinnamon syrup. The drink won't have that "toasted" flavor to it, but it will still be super tasty.
- I personally think this drink would be absolutely incredible with a caramel sauce drizzle.
- If you don't have any vanilla cookies, just sprinkle ground cinnamon over the whipped cream.
- Feel free to use decaf coffee in the Frappuccino. You could also use espresso if you prefer. Or you can leave the coffee out altogether and simply use more oat milk.

Of course, when you make it at home, how much caffeine it contains will depend on what kind of coffee you use and how strongly brewed it is. I do recommend using a strongly brewed coffee since you don't add a lot of it to the drink.

Cinnamon Crumble Oatmilk Frappuccino
Ingredients
- ¾ cup oat milk
- ½ cup strongly brewed coffee
- 3 Tbsp toasted cinnamon syrup (recipe below)
- ¼ tsp xanthan gum (can substitute with cornstarch, but use a little bit more)
- 1 cup ice
- Nondairy whipped cream (can use regular whipped cream if you prefer)
Toasted Cinnamon Syrup
- 2 cinnamon sticks
- 1 cup water
- ½ cup light brown sugar packed
- ½ cup granulated sugar
Cinnamon Crumble Topping
- 1 vanilla cookie (like Golden Oreo or Nilla Wafer) crushed
- ⅛ tsp ground cinnamon
Instructions
- Add oat milk, coffee, toasted cinnamon syrup, xanthan gum, and ice to blender and process until smooth and frothy.
- Pour into cup and top with whipped cream and cinnamon crumble topping.

- Place a dry cast iron skillet (can also use stainless steel or any nonstick skillet) over medium heat and add cinnamon sticks.
- Allow cinnamon sticks to toast for about 3-5 minutes, turning them occasionally with tongs to ensure even toasting. Let them toast until they're starting to darken and get fragrant.
- Put water, both kinds of sugar, and cinnamon sticks in a medium-size saucepan and bring mixture to a boil.

- In a small bowl, mix together vanilla cookie crumbs and cinnamon.
