Starbucks officially launched their line of blue coconut drinks in June 2026 and you knew I was going to be all over the gorgeous Iced Blue Coconut Matcha!
The iced matcha is blended with mango syrup and topped with with creamy toasted coconut cold foam that's a gorgeous shade of blue.
Even better? The blue is not achieved through artificial coloring; it's from blue spirulina powder.
This is the kind of drink you know is going to be all over social media. But luckily, the taste lives up to the visual appeal and this is an absolutely delicious drink!
I've already got a homemade mango syrup and a toasted coconut syrup in my repertoire, so this one came together pretty naturally. The result is gorgeous, super easy to pull off at home, and actually tastes like summer in a cup.

Blue spirulina powder adds coloring: the powder has no flavor in small amounts and is all-natural and easy to find. Plus, I feel like it results in a more gorgeous shade of blue than any food dye ever could!
Most elements can be prepped ahead of time (or store-bought): I share my recipes for mango syrup and toasted coconut syrup, but you can make them in advance or even purchase them. You can also make the blue toasted coconut sweet cream in advance and then whip it into a cold foam right before you make your drink.

Here's everything you need to make the Iced Blue Coconut Matcha in your own kitchen (be sure to view the recipe card at the bottom of this post for ingredient amounts and full recipe instructions):
- Unsweetened matcha powder:
Starbucks used to use sweetened matcha powder, but in 2025 they switched to unsweetened. Don't worry, the syrups added make this drink perfectly sweet! - 2% milk: or the dairy/non-dairy alternative of your choice
- Mango syrup: you can either use store-bought syrup or homemade with the recipe linked
- Ice
- Blue Toasted Coconut Cold foam: I'll show you how to make this and share the ingredients needed below.
For the Blue Toasted Coconut Cold Foam, you'll need:
- Heavy cream
- 2% milk
- Toasted coconut syrup: you can either use store-bought syrup or homemade with the recipe linked
- Blue spirulina powder: if you don't have this, you can certainly use a little blue food coloring
🥥 Recipe tips
- If you're making your own mango syrup and toasted coconut syrup, you can make them ahead of time and keep them in airtight jars in your fridge for about a month.
- If you're making your own toasted coconut, I'd aim for a lighter toast on the coconut as you don't want your syrup to be too dark for the cold foam's vibrant blue to shine. But I've also used darker syrups for this and my foam has turned out just fine.


- You can make the blue toasted coconut sweet cream in advance and keep it in a mason jar or airtight container in your fridge. When you're ready for your drink, you can whip the sweet cream into a cold foam.
- Cold foams froth up best with really cold ingredients, so make sure you use cream and milk right out of the fridge. And if you make the sweet cream in advance, keep it chilled until ready to use.
- If you don't have a frother, you can make your cold foam in a blender or with a hand mixer. You can even just keep it in the mason jar and shake it vigorously. Your foam won't be quite as voluminous, but it will still give you a nice froth.
- I froth about ⅓ of the sweet cream at a time, which is enough for a drink. The batch of sweet cream makes enough cold foam for 3 drinks.
- You only need a little bit of blue spirulina powder to get that gorgeous color blue!

- I whisk my matcha powder with just a few tablespoons of milk until it's dissolved and then add the rest of the milk (you can do the whisking in a separate bowl or do it all within your cup). If your mixture is still clumpy, you can sift it through a fine mesh sieve.
- If you like a sweeter drink, add a little bit more mango syrup. If you're watching sugar, you can certainly use less.


- Then you just top the mango matcha with that beautiful blue cold foam! Not gonna lie; I think this is my favorite cold foam yet. I just can't get over the color.
Plus, blue coconut is having a moment. I recently shared my recipe for Sonic's Ocean Water drink, which is also blue coconut flavored!
But this drink is actually blue toasted coconut, which takes things to a whole new level. Instead of hot summer days on a tropical island, it brings to mind warm summer nights by a beach campfire.
It's perfectly sweet and the matcha, mango, and toasted coconut make the best team. Plus, that color combo!!

🎉 Variations on recipe
Of course, like all
- Use whatever dairy or non-dairy milk you want instead of 2%. I especially recommend coconut milk as this will really complement the tropical flavors!
- You can also use a non-dairy heavy cream alternative in the cold foam. The texture will be slightly lighter but still delicious.
- Swap the mango syrup for the syrup flavor you like best (or add a couple flavors!). Vanilla syrup or pineapple syrup would be especially delicious here.
- Make it frozen Frappuccino-like drink by blending the matcha base with ice for a and topping with the cold foam as usual.
- Put a layer of strawberry puree on the bottom of the cup or line the cup with it for even more fun visual appeal.
- Top the drink with shredded toasted coconut or freeze-dried mango pieces.

Iced Blue Coconut Matcha {Starbucks Copycat}

Ingredients
- 1 ½ teaspoon unsweetened matcha powder
- ¾ cup 2% milk (or dairy/non-dairy alternative of your choice)
- 2 tablespoon mango syrup store-bought or homemade with recipe linked
- Ice
- ⅓ cup Blue Toasted Coconut Cold foam (recipe below)
Blue Toasted Coconut Cold Foam
- ½ cup heavy cream
- ⅓ cup 2% milk
- 2 tablespoon toasted coconut syrup store-bought or homemade with recipe linked
- ¼ teaspoon blue spirulina powder
Instructions
- Put matcha powder in glass and add about 3 tablespoon milk. Whisk until powder is dissolved and mixture is smooth.

- Add remaining milk and stir in mango syrup. Pour mixture into an ice-filled glass.

- Top with blue toasted coconut cold foam.

Blue Toasted Coconut Cold Foam
- Add milk, cream, toasted coconut syrup, and blue spirulina powder to a mason jar (or other airtight container) and shake vigorously. Or mix all ingredients in a bowl until well combined. This is your blue toasted coconut cold cream... Keep it in the fridge until you're ready to turn it into cold foam right before using.

- To turn into foam, you can either use an electric frother, hand mixer, or blender with ⅓ cup cream at a time. Alternatively, you can shake the mixture vigorously in a mason jar until it's frothy.

Notes
- Cold foam recipe should make enough for about 3 drinks. Turn it into cold foam in batches and keep the leftover sweet cream in an airtight container in your fridge until ready to use.
