We don't know why they aren't bringing back the well loved Frappuccino. But we do know you can easily make your own copycat S'mores Frappuccino at home!
🧋 What is the S'mores Frappuccino?
The S'mores Frappuccino was a special edition drink introduced to customers in the summer of 2015. It came back for the summer of 2019, but hasn't been launched since.
And sadly, because of its special ingredients, it's not the kind of drink you can special order at
The drink was a layered Frappuccino, like the Caramel Ribbon Crunch and Mocha Cookie Crumble and it consisted of a layer of marshmallow whipped cream, a layer of milk chocolate sauce, a coffee-based vanilla syrup Frappuccino with a marshmallow whipped cream topping sprinkled with graham cracker crumbs.
I believe that when the drink was initially introduced, they used a graham cracker syrup in the Frappuccino instead of vanilla. I have some recommendations if you're interested in replicating those flavors!
🗒Ingredients
Here's everything you need to make the S'mores Frappuccino as close as possible to the old
- Marshmallow whipped cream: I share a recipe for homemade, but you can also use Target's marshmallow whipped cream.
- Milk chocolate sauce: I recommend using this milk chocolate sauce or something similar. You can also feel free to make your own. You can use Hershey's chocolate sauce in a pinch, but it's a bit thinner and sweeter than what
Starbucks used. - Whole milk
- Espresso or strongly brewed coffee: cooled
- Marshmallow or vanilla syrup:
Starbucks used vanilla syrup in their Frappuccino, but if you already have marshmallow syrup for the whipped cream, I recommend using it in the Frappuccino for even more s'mores flavor. Toasted marshmallow syrup works well. - Graham cracker squares: In the first version of their drink,
Starbucks used graham cracker syrup in the Frappuccino mixture. They just used vanilla syrup when they brought it back, but if you're looking for some extra graham flavor, blend some graham crackers in. - Xanthan gum: this ingredient helps thicken the Frappuccino and really does make a difference. You can substitute with cornstarch, but you will need to use a little bit more.
- Ice cubes
- Graham cracker crumbs: for topping
If you're making your own marshmallow whipped cream, here's what you need:
- Heavy cream
- Marshmallow syrup
- Cream of tartar: this ingredient is optional for stabilization
👩🍳 Recipe Tips
- Adding cream of tartar to your homemade whipped cream can help stabilize it a bit. Since I wanted to pipe the marshmallow whipped cream onto my drink instead of just plopping it on, I used it to get a little stabilization. You can also use a little gelatin (make sure to bloom it in water first) or a cornstarch slurry.
- I always add a little xanthan gum to my homemade Frappuccinos because it really helps thicken the drink and make it even more creamier and close to the coffee shop version. You can substitute with cornstarch, but you may need to add a little more. You can also leave it out if you prefer and your drink will still be delicious!
- When
Starbucks brought back their S'mores Frappuccino, they skipped the graham cracker syrup in the base and used vanilla syrup instead. If you want the graham flavor, add a couple graham cracker squares into the blender when you're blending the drink.
- If you don't want coffee in your Frappuccino, you can definitely leave the espresso out.
- In addition to no longer carrying graham cracker syrup or marshmallow syrup,
Starbucks no longer carries milk chocolate sauce, which is one of the reasons you can't order the S'more Frappuccino anymore. I do recommend using a milk chocolate sauce for this as it comes much closer to the s'mores flavor than a darker mocha sauce does.
- In a pinch, you can use Hershey's syrup, but it's thinner than a sauce and sweeter.
- Feel free to add a layer of graham cracker crumbs over the chocolate for extra graham flavor.
- The S'mores Frappuccino was a layered drink, but if you prefer, you can add the chocolate sauce into the Frappuccino mixture along with a little extra marshmallow syrup instead of layering.
- I use a piping bag and open star tip to pipe my whipped cream onto the Frappuccino. If you are making your own whipped cream and don't care about appearance, you can spoon it over the top.
This homemade S'mores Frappuccino tastes as close to the
Packed with marshmallow, milk chocolate, and graham flavors, it's like summer in a cup and perfect for enjoying on a hot day or during an evening by a campfire.

S'mores Frappuccino {Starbucks Copycat}
Ingredients
- Marshmallow whipped cream (recipe below or store-bought)
- 2 tablespoon milk chocolate sauce*
- ¾ cup whole milk
- ¼ cup espresso or strongly brewed coffee cooled (omit if you prefer)
- 2 tablespoon marshmallow or vanilla syrup
- 2 graham cracker squares (optional for more graham flavor)
- ¼ teaspoon xanthan gum (optional for thickening Frappuccino- can substitute with cornstarch, but use a little bit more)
- 1 cup ice cubes
- Graham cracker crumbs for topping
Marshmallow Whipped Cream
- ½ cup heavy cream
- 1 tablespoon marshmallow syrup
- ¼ teaspoon cream of tartar (optional for stabilization)
Instructions
- Put a small layer of marshmallow whipped cream on the bottom of your cup (about ¾ inch). Top with about 2 tablespoons milk chocolate sauce.
- Add milk, espresso/coffee, marshmallow or vanilla syrup, graham crackers (if using), xanthan gum (if using), and ice to blender and process until smooth and frothy.
- Pour Frappuccino into cup and top with marshmallow whipped cream (pipe it on or spoon it on) and graham cracker crumbs.
Marshmallow Whipped Cream
- In the bowl of a stand mixer with whisk attachment or in a medium bowl with a hand mixer, beat together heavy cream, cream of tartar (if using), and marshmallow or vanilla syrup on medium-high speed until stiff peaks form, about 4-5 minutes. If not using immediately, store in fridge.
