Here's everything you need (be sure to view the recipe card at the bottom of this post for ingredient amounts and full recipe instructions):
- Puff pastry sheet: be sure to thaw if your puff pastry is frozen.
- Deli hickory-smoked ham slices: if you can't find hickory-smoked, you can use any variety of deli ham you want.
- Sliced swiss cheese: if you don't like swiss cheese, you can use any cheese you want
- Lightly beaten egg: for brushing croissants prior to baking.
🥐 How to make Starbucks ham and cheese croissant
With just one sheet of puff pastry, you can make 6 ham and swiss croissants. Which means you can have a breakfast treat all week long!
To start, make sure to preheat your oven to 400 degrees and line a baking sheet with parchment paper or a silicone mat.
Now you can unfold your sheet of puff pastry out onto a cutting board and smooth out any creases.
Using a pizza cutter or a sharp knife, cut the rectangle lengthwise three equal strips.
And then cut these strips diagonally into triangles.
You should end up with 6 long, narrow triangles.
Place a slice of cheese on top of a slice of ham (if your cheese is longer in width and hanging outside the ham a lot, you may want to trim it) and fold over.
Place them at the wide end of a puff pastry triangle.
Starting from the wide end where you’ve placed the ham and cheese, begin rolling the dough towards the pointy end of the triangle.
Ham and cheese can be hanging out of the ends a bit and you can leave the dough open at the ends.
Place formed croissants on prepared baking sheet and brush each one lightly with egg wash, so your croissants will get glossy and golden.
Bake for 14-18 minutes, until croissants are puffy and golden.
The cheese will likely ooze out a bit and get crispy.
You can either cut this off or eat it (there's something really delicious about crispy cheese!)

It's so easy to grab a ham and cheese croissant on the go and the pastry is also great for eating while you're sitting in front of your computer answering work emails.
They also go perfectly with a cup of coffee, especially a brown sugar oatmilk cortado (which you can also make at home!).
You can make a batch of these breakfast croissants on a Sunday and have your quick and easy breakfast ready for the week since they're easy to store.
⏲️ How to store
When stored properly, the croissants should keep fresh in the fridge for 3-4 days. I recommend wrapping them individually in plastic wrap and then putting them in an airtight container in the fridge.
When you're ready to enjoy one in the morning, you can pop it in the oven or toaster oven at 325 degrees until warmed through.
You can also freeze the finished croissants. I recommend wrapping them in plastic wrap and aluminum foil before putting in a large freezer-safe bag or airtight container.
You don't need to thaw the frozen croissants before enjoying. Just pop in the oven at 350 degrees and cook for about 15-18 minutes, until hot on the inside.
If the croissants aren't crispy enough after baking, you can turn on the broiler for a 30 seconds to a minute, but be sure to keep an eye on them so they don't burn.

I think ham and swiss is one of the most perfect combinations, but one of the great things about this ham and cheese croissant recipe is that you can use it to make so many different varieties of breakfast pastries!
Here are some ideas:
- Switch out the kind of cheese or deli meat you're using in the croissants. Try turkey, chicken, cheddar, feta, gruyere, or any combination you like best.
- Make pizza croissants by spreading a little bit of pizza sauce on the puff pastry (be careful not to use too much), shredded mozzarella cheese, and pepperoni.
- For extra heartiness, add scrambled eggs, bacon, and cheese to the puff pastry.
- Spread a thin layer of cream cheese on the puff pastry and top with smoked salmon and chives.
- Make a sweet breakfast pastry by spreading a little bit of Nutella on the puff pastry (be careful not to use too much or it will ooze out). You can top with sliced bananas and dust the baked croissants with powdered sugar.
- For another sweet option, you can make an apple cinnamon croissant. I recommend peeling and dicing the apples and cooking them for a couple minutes in a pan with a little sugar and cinnamon (this will help prevent them from being too wet and making the croissants soggy when baked).
Really, the flavor options for filled croissants are nearly endless and there are so many ways to make them your own!
