Eggs are one of my all-time favorite foods and I absolutely love them in egg bite form since they make a ridiculously easy make-ahead breakfast and are so easy to customize any way you like.
But sometimes I want an egg bite that's a little bit lighter. Which is exactly what egg white bites are for!

🍳 How are egg white bites different than egg bites?
Of course, the most obvious answer is that instead of being made with whole eggs, egg white bites are made with the egg whites only (no yolks!).
I've made Starbucks Egg Bites before and they're easy to make and delicious. But guess what? These egg white bites are just as easy to make and just as delicious!

You don't need any special equipment to make the quick breakfast bites and all of the ingredients are easy to get at the grocery store.
😍 How to get velvety egg bites
Starbucks uses the sous-vide method to give their egg bites an extra smooth velvety feel. But sous vide is really just a "low and slow" way of cooking the bites an this can also be accomplished by baking them in your oven at a low temperature for a longer amount of time.
Because egg whites have less fat and more moisture than whole eggs, I also add a little cornstarch or arrowroot powder to my mixture to help stabilize them and make them extra creamy!
🗒 Ingredients
You only need simple ingredients for this
- Egg whites: you can either separate whole eggs or use a carton of egg whites
- 2% fat cottage cheese
- Shredded Monterey Jack cheese
- Crumbled feta cheese
- Cornstarch or arrowroot powder: this helps give the egg bites a bit more structure, but can be left out if preferred
- Salt & pepper
- Hot sauce: you can omit this if you want, but I think it gives a nice little kick
- Diced roasted red peppers: you can substitute with regular red pepper if you want
- Finely chopped spinach
- Chopped scallions
I highly recommend using a nonstick muffin tin or silicone molds as egg white bites have a tendency to stick to the pan when baked. They're a bit pricey, but I seem to have the best luck using the Caraway muffin tin.
You'll still want to also coat the tin in cooking oil or spray.
👩🍳 How to make Starbucks egg white bites
Making these protein-packed bites really couldn't be easier with this simple recipe! And I love that you can make a big batch of them and enjoy them throughout the week.
Start by preheating the oven to 200 degrees and spraying a 12-cavity nonstick muffin tin with cooking spray.
Put the egg whites, cottage cheese, Monterey Jack, feta, cornstarch, salt, pepper, and hot sauce in a blender.
And process until smooth.
Divide the egg mixture evenly between the muffin cups.
Top evenly with chopped roasted red peppers, spinach, and green onion.
Use a spoon to gently press toppings into egg mixture a bit.
Place muffin tin in the preheated oven and cook for 65-70 minutes, until egg bites are set in the middle and are starting to turn golden at edges.
Ooh lala!
Let the egg white bites rest for a couple minutes and then lightly run a knife along the edge of each egg bite to remove from tin.
You can eat these little beauties right away.
I haven't done a side-by-side comparison, but I honestly do think these are just as delicious as egg bites with the yolks in them.

Since a batch makes 12 and I typically eat 2 at a time, that means there are plenty to be enjoyed all week long.
⏲️ How to store
Egg white bites are a great make-ahead breakfast that can be enjoyed throughout the week! I love baking a batch on Sunday and then not having to think about what I'm going to eat the next few mornings of the week.
You can store leftover egg white bites in an airtight container in the fridge for about 4-5 days. When you're ready to enjoy them, just pop them in the microwave (for about a minute) or the oven to gently warm.
🥶 How to freeze
If you want the egg white bites to last even longer, you can also freeze them!
When they're completely cooled, place the egg bites on a baking sheet and put it in the freezer. Once the bites are frozen, remove them from the baking sheet and put them in a large freezer bag.
I recommend thawing the egg white bites in the fridge overnight and then warming them in the microwave or oven in the morning.
Now you can make an EXTRA big batch just once and always have an easy on-the-go breakfast ready.

Starbucks Egg White Bites {Copycat Recipe}
Ingredients
- 14 oz. egg whites (from carton or separated from 14 large eggs)
- ¾ cup 2% cottage cheese
- ½ cup shredded Monterey Jack cheese (or cheese of your choice)
- ¼ cup crumbled feta cheese
- ½ tablespoon cornstarch (or arrowroot powder)
