If you know me, you know I always have a box of Lucky Charms in my house. Not for breakfast, but for baking.
I love creating recipes with Lucky Charms cereal and have made everything from ice cream to oatmeal to granola bars. And now it's time for pancakes.
These Lucky Charms pancakes are quick and easy to make and are packed with sweet cereal flavor.
I recommend topping them with warm marshmallow fluff and lots of extra Lucky Charms marshmallows.
🗒 Ingredients
The ingredients for this recipe are pretty standard pancake ingredients, plus the addition of Lucky Charms cereal.
In addition to the toasted oats portion of the cereal crushed and included in the pancake batter, you'll also fold in lots of Lucky Charms marshmallows.
Here's everything you need (be sure to view the recipe card at the bottom of this post for ingredient amounts and full recipe instructions):
- All-purpose flour
- Lucky Charms cereal
- Granulated sugar
- Baking powder
- Salt
- Milk
- Melted unsalted butter
- Large egg
- Vanilla extract
Did you know you can buy an entire bag of Lucky Charms marshmallows? I highly recommend always having these on hand for those times when there just aren't enough marshmallows in your cereal box!
🥞 How to make
If you know how to make pancakes, you know how to make Lucky Charms pancakes!
The hardest part is crushing some of the toasted oats in the cereal to add to the flour, sugar, baking powder, and salt.
Whisk these ingredients together.
In a separate medium bowl, whisk together the milk, melted butter, egg, and vanilla extract.
Now, pour the wet ingredients into the dry ingredients, stirring until they’re just combined, but being careful not to over-mix.
As with all pancake batter, some lumps are OK.
Time for the best part... Fold in the Lucky Charms marshmallows!
And heat a griddle or frying pan over medium-low heat and lightly brush with butter or cooking oil.
Pour about ⅓ cup batter onto the griddle and cook pancakes for about 2 minutes on each side, until they’re nicely browned. Repeat with all batter.
Once cooked, the marshmallows aren't quite as bright and vibrant as they are uncooked... But you can easily make these Lucky Charms pancakes look extra fun (and even more delicious) with some warm marshmallow fluff sauce (you can also simple use marshmallow sauce if you prefer).
And then add additional Lucky Charms cereal on top. You can use just the marshmallows or a little bit of everything.
And dig into the fully loaded stack. The light and fluffy pancakes have all the Lucky Charms flavor thanks to the crushed toasted oats and cereal marshmallows.
But there's something so much more satisfying about a stack of pancakes than a bowl of cereal, right?
This is the kind of breakfast treat both kids and adults will enjoy.
They're perfect for St. Patrick's Day breakfast, but can really be enjoyed all year round, just like the cereal is.
⏲️ How to store leftovers
As with most pancakes, these are best enjoyed fresh, but if you have leftovers, you can certainly store them away to enjoy later.
Once the pancakes are cooled, you can simply wrap them in plastic wrap or foil and store them in the fridge. You can also store them in an air-tight container if you prefer.
They should keep fresh for about 2 days when stored properly. And you can reheat in the microwave, toaster, or in a skillet.
🎉 Variations on recipe
There are so many ways you can make Lucky Charms pancakes and so many more fun ingredients you can incorporate into them.
Here are some ideas for variations on this recipe:
- Use the same recipe, but replace the cereal with Chocolate Lucky Charms for a fun twist. You can top the pancakes with chocolate sauce, too, and can even add cocoa powder to the pancake batter if you want.
- Add rainbow sprinkles to the batter for even more fun color.
- Add a marshmallow fluff swirl to the pancake batter.
- Add blueberries, chopped strawberries, or bananas into the batter for fruity Lucky Charms pancakes.
- If you prefer not to incorporate the crushed oats cereal into the batter, you can use cereal milk instead. Just let the milk soak in cereal for about an hour and strain before adding to pancake batter.
- Top pancakes with whipped cream instead of marshmallow sauce.
- Or simple enjoy the traditional maple syrup drizzle with these pancakes.

Lucky Charms Pancakes
Ingredients
- 1 ¼ cup all-purpose flour
- ¾ cup crushed toasted oats from Lucky Charms cereal
- 2 tablespoon granulated sugar
- 2 teaspoon baking powder

- ½ cup Lucky Charms marshmallows
- Marshmallow Fluff for topping
