Merry Christmas! I hope your day is filled with love and joy and is everything you are hoping for. We’re spending the day with family- my mother-in-law is visiting us and we’ll be celebrating with my parents, sister and brother-in-law, and my beautiful nephews. Chris and I are pretty excited that we can fit a decent sized tree into our home- it’s our first real tree together and I love it!
If you’re me, you don’t tell sugar cookies they can only come out to play during the holiday season. You allow sugar cookies to make an appearance whenever their heart so desires. And while this dessert is kind of holiday-themed, it’s more just perfect for winter. And if you weren’t aware, winter legitimately JUST started. Yeah, there are lots of months left. It’s actually strangely warm here in Boston for this time of year. Like in the 50s today… On Christmas! What kind of crazy is that?
Winter Wonderland Sugar Cookie Bark:
- 2 ¼ C all-purpose flour
- 1 t baking powder
- ½ t salt
- 1 C (2 sticks) butter, room temperature
- 1 ½ C granulated sugar
- 1 egg
- 1 ½ t vanilla
- Wilton Sugar Cookie Candy Melts
- Sprinkles
- 1 ½ C mini marshmallows
(pre-heat oven to 350 degrees)
This recipe is a fabulously easy one and basically consists of baking a giant sugar cookie and covering it in delicious Wilton Sugar Cookie Candy Melts, sprinkles, and marshmallows. Do you need anything else in life?
To start, whisk the flour, baking powder, and salt together in a medium bowl.
Then, cream the butter and sugar in the bowl of a stand mixer until light and fluffy.
Beat in the egg and vanilla, being sure to scrape down the sides of the bowl.
Slowly mix in the flour mixture until just combined.
Place the dough in a ball onto a cookie sheet lined with parchment paper and roll it out into a rectangle, about ⅛-inch thick.
Bake for 10-12 minutes at 350 degrees. Let the cookie cool slightly.
Put candy melts in a bowl.
And melt according to package directions. I love that these sugar cookie ones already have fun Christmas-colored sprinkles in them.
Now, pour the candy melts onto the cookie and spread to cover the entire surface.
Sprinkle other wintry or holiday-themed sprinkles over the top and sprinkles marshmallows all over. Let the candy melts cool and harden.
Break into pieces, like you would a bark.
So, this isn’t exactly a traditional bark. It’s more like a double sugar cookie that is covered with awesomeness and broken into pieces. But I’m still going ahead with calling it a bark…. Because that’s way more fun than calling it a cookie.
Plus, you don’t have to think of it in terms of “whoa, I just ate 10 cookies…” and can instead simply say “No big deal, I just ate some cookie bark.” Nobody has to know how large those pieces were.
I’m just saying…
I was a big fan of how soft these were; again not really typical of bark, but perfectly fine with me. The Sugar Cookie Candy melts accentuated the flavors of the cookie and basically put me on sugar overload.
But is there anyone who doesn’t love sugar cookies? Seriously. I bet you can’t find anyone.
And I don’t really want to know if you can. I feel like it’s a downright insult to Christmas and the winter season in general.
I’ve actually never seen the movie… But these also kind of sort of remind me of Frozen. I’m not sure if that’s a good thing or a bad thing (probably depends on who you ask). It’s obviously because of the colors. Which is why I call this holiday treat Winter Wonderland Sugar Cookie Bark.

I never wrote a blog post for these cookies since it’s a simple sugar cookie and royal icing, but now that the holiday season is coming to an end (wah!), I wanted to share a photo. I used the Melted Snowman Cookie Cutter from Wilton and though I’m not a pro decorator AT ALL, I was pretty happy with how they came out!

- Pour the candy melts onto the slightly cooled cookie and spread to cover the entire surface.
- Sprinkle other wintry or holiday-themed sprinkles over the top and sprinkles marshmallows all over. Let the candy melts cool and harden.
- Break into pieces into bark-like pieces.
- Store in airtight container.
