Switch up your typical pizza night with this Artichoke Pizza! It's packed with marinated artichoke hearts, mozzarella, parmesan, and a garlic olive oil, which all combine into a delicious flavor combination. The pizza makes for the perfect easy dinner, but is also a fantastic party appetizer.

We don't talk about artichokes enough. We also don't eat artichokes enough.
There are some vegetables I totally avoid in a can or jar and that includes asparagus, onions, green beans, and more. Give me fresh or in a pinch, give me frozen, but don't ever give me canned or jarred.
But artichokes? I prefer them in a jar to fresh because if I buy an artichoke fresh, there's a really slim chance I'm actually going to prep it to eat it before it goes bad. Because they're SO MUCH WORK.
And jarred artichokes, especially marinated artichokes, are actually delicious and have so many uses. I add them to lots of pasta dishes, chicken dishes, and so much more.
But they're also incredibly delicious when used as a pizza topping and I think this artichoke pizza is officially now in my top 5 favorite pizza recipe standings.

It's really easy to put together and doesn't require too many ingredients, but the flavors work so well together and can also easily be customized to your own personal tastes.
This is a vegetarian pizza, but carnivores and omnivores will love it, too!
🗒 Ingredients
You don't need too many ingredients to make the perfect artichoke pizza! I like to make my own pizza dough, but you can easily use store-bought dough if you prefer. Here's what you need for the pizza (be sure to view the recipe card at the bottom of this post for ingredient amounts and full recipe instructions):
- Pizza dough: you can use your favorite store-bought dough or make homemade dough with the recipe I include in this post.
- Olive oil
- Minced garlic
- Marinated artichoke hearts: drained and chopped. I do recommend marinated artichoke hearts for the extra flavor, but you can use whatever kind you want.
- Shredded mozzarella cheese
- Grated parmesan cheese
- Red pepper flakes
- Fresh parsley
And if you're making your own dough, here's what you need for my favorite pizza dough recipe:
- Active dry yeast
- Lukewarm water
- Salt
- Extra-virgin olive oil
- Honey
- All-purpose flour
- Garlic powder
👩🍳 How to make homemade pizza dough
Believe it or not, making homemade pizza dough is actually super easy! You just need to make sure you build in a little bit of time to let it rise.
To start, mix the yeast and the water in a large bowl and let rest for 2 minutes.
Stir salt, extra-virgin olive oil, and honey into the mixture.
With a wooden spoon, mix 1 ½ cups + 2 tablespoon flour and garlic powder into the mixture. If dough feels too wet, you can add in another tablespoon flour.
Form dough into a ball, gently knead a few times in the bowl.
Cover bowl with a kitchen towel and let rest in a warm spot for about 2 hours, so dough can rise.
🍕 How to make artichoke pizza
Now that you have your dough, the rest of the pizza making process is a breeze!
Start by preheating your oven to 450 degrees and lightly dusting a round baking pan with cornmeal.
I like to brush my dough with a garlic olive oil, so I start by making that by simply mixing together the oil and minced garlic.
Now, stretch your dough out to fit on the prepared baking sheet and brush it lightly with the garlic olive oil, making sure to brush all the way to the edges of dough.
I'd honestly eat a pizza that's just this... Garlic olive oil on homemade dough. Heaven!
But I also love all of the other toppings on this artichoke pizza, too, so I'm going to keep adding them!
Including the chopped artichokes, mozzarella cheese, parmesan cheese, and red pepper flakes.
Fully load that baby up!
And pop the pizza in the preheated oven for 12-15 minutes, or until the crust is just golden brown and the cheese is melted and bubbly.
Once it's out of the oven, top it with lots of fresh parsley.
I'm pretty sure I could eat this every day and never get sick of it.
There's no meat involved, but the artichokes bring a sort of meatiness, thanks to their satisfying texture.
The mozzarella cheese is nice and creamy and the parmesan cheese brings an umami and sharpness that works perfectly with the mild artichokes.
Obviously, the red pepper flakes are a necessity if you want to add a little kick to mostly mild ingredients.
Even if you prefer pepperoni pizza or meat lovers' pizza, I urge you to try this artichoke pizza just once!
In addition to making an easy weeknight dinner when served with a salad or a special pizza Friday meal, it's also a great appetizer to bring to a party.
If you prefer, you can bake it on a rectangular baking sheet and slice it into small squares for serving to a crowd.
⏲️ How to store
One of my favorite parts of pizza is leftover pizza! Whenever we make artichoke pizza at our house, we don't generally have leftovers (despite the fact there are only two of us eating it...), but if you happen to have any, they're easy to store for later.
Once the pizza is completely cooled, you can store the slices in an airtight container or you can wrap them in aluminum foil. It should keep fresh in the fridge for 3-4 days when stored properly.
You can reheat the leftover pizza either in the oven, in the toaster oven, or in the microwave. Of course, you can also feel free to eat it cold!

I like to keep my artichoke pizza pretty simple because I love the harmony of all the flavors together. But there are so many additional toppings you can add to make this pizza your own!

- Fresh lemon juice: I like a little squeeze of fresh lemon juice over this pizza on occasion.
- Olives: I also love kalamata olives as an added topping. Black olives or whatever variety you prefer would also work.

Artichoke Pizza
Ingredients
- 1 lb pizza dough (store-bought or homemade with recipe below)
- 2 ½ tablespoon olive oil
- 1 tablespoon minced garlic
- 1 cup marinated artichoke hearts drained and chopped
- ¾ cup shredded mozzarella cheese
- ½ cup grated parmesan cheese
- ¼ teaspoon red pepper flakes
- 1 teaspoon chopped fresh parsley
