    Will funfetti desserts ever go out of style? I don't think so. Aside from chocolate and vanilla, I'm a firm believer that funfetti must be the most popular cake flavor. Especially for celebrating birthdays.

    So many desserts have been based off of the funfetti flavor and there are so many fabulous recipes for homemade funfetti cakes... but I have to admit, there's nothing quite like the flavor of the boxed mix.

    It's awesomely sweet, packed with vanilla flavor, and has just a slight artificial taste that makes it totally crave-worthy. Oh, and you can't beat those rainbow sprinkles that actually show up when you bake them instead of bleeding into the cake.

    I've made my own homemade confetti cookies before. But they never taste quite like the boxed cake does. So, I decided to try making cookies with boxed Funfetti cake mix. And guess what? This easy recipe results in confetti cake cookie perfection.

    You only need 3 ingredients to make these Funfetti cake mix cookies and they taste just like funfetti cake, but in cookie form!

    👩‍🍳 Can I make cookies with cake mix?

    You sure can! Using boxed cake mix as a base for cookies is a fun and super easy way to whip up a batch of cookies with minimal effort.

    With cake mix, you already have the flour, sugar, leavening agents (like baking powder or baking soda), a little bit of fat (though you'll need more) salt, and flavoring all in one.

    Turning boxed cake mix into cookies result in a soft, chewy cookie that will make you seem like a professional baker.

    🗒 Ingredients

    When you make a cake with a box of Funfetti cake mix, you generally only need to mix in oil and eggs.

    You also only need two additional ingredients to turn the mix into cookies, but instead of oil, I recommend using butter.

    Here's what you need for these Funfetti cake mix cookies (be sure to view the recipe card at the bottom of this post for ingredient amounts and full recipe directions):

    • Funfetti cake mix
    • Unsalted butter
    • Large Eggs

    🍪 How to make funfetti cake mix cookies

    As you can probably tell based on the ingredient list, these cookies are incredibly easy to make.

    Start by preheating your oven to 350 degrees and lining two baking sheets with parchment paper.

    In the bowl of a stand mixer or in a large bowl with a hand mixer, cream the butter until light and fluffy, 2-3 minutes.

    Don't worry; if you don't have a mixer, you can use a bowl and wooden spoon or spatula with no problem at all. You'll just need a little elbow grease!

    Mix whole egg and egg white into the butter until combined.

    Don't worry if your mixture looks a little runny/clumpy... It will all come together when you add the cake mix.

    Now, add the Funfetti cake mix to the butter mixture and mix until just combined, taking care not to over-mix.

    Scoop about 2 Tbsp of cookie dough (I use a #40 cookie scoop) onto the prepared baking sheets.

    Bake cookie dough balls for 10-12 minutes, until cookies are just turning golden around the edges, but are still soft.

    Let cookies cool in the pan for a couple minutes before moving to cooling racks to cool completely.

    And get ready to enjoy your favorite cake flavor in cookie form.

    Hooray! These colorful cookies are so ridiculously buttery and packed with vanilla flavor. They're also super moist and soft... Almost cake-like, but with perfectly crispy edges.

    ⏲️ How to store

    Storing these Funfetti cake mix cookies is super easy. When they're completely cooled, you can put them in an airtight container at room temperature (if you're stacking them, place layers of parchment paper in between cookies).

    They should stay fresh for about 5-7 days when stored properly.

    🎉 Variations on recipe

    These funfetti cookies are perfection with just 3 ingredients. However, you can also add any ingredients you want to make these even more fun! Here are some ideas of cookie add-ins:

    White chocolate chips: White chocolate goes so well with funfetti flavor and white chocolate chips would be so good in these.

    Semisweet chocolate chips: However, if you prefer regular chocolate, you can always add semisweet (or dark chocolate) chips.

    Coconut: Shredded coconut will add even more sweetness to these cookies.

    Nuts: Nuts like pecans, walnuts, or macadamia nuts will add a fun crunch.

    Freeze-dried strawberries: To add a fruity touch to the cookies, try adding freeze-dried strawberries (or the freeze-dried fruit of your choice).

    Extra sprinkles: If the Funfetti mix just doesn't have enough sprinkles for you, consider adding in even more rainbow sprinkles or the fun colorful sprinkles of your choice.

    Vanilla extract: I love that these cookies are already packed with vanilla flavor, but if you want even more, you can add additional vanilla extract. If you want to switch things up a bit, try adding almond extract.

    Vanilla icing: Make a quick and simple vanilla icing to drizzle over these cookies.

    Funfetti frosting: Or you can buy a container of Funfetti frosting and spread it over these cookies for an even close to cake cookie feel. Next time, I'm totally doing this. Cream cheese frosting would be delicious, too.

    🍰 Can I use another flavor cake mix?

    Yes! You should be able to make these cookies with any flavor cake mix you want, so long as your box is 15.25 oz., though there may be slight variations with some.

    If you can only find white cake mix, you can add extra vanilla extract and rainbow sprinkles to the batter.

    You can also try making strawberry cake mix cookies, chocolate cake mix cookies, lemon cake mix cookies, red velvet cake mix cookies, and more.

    Now I'm over here wondering if we can turn sugar cookies into cake.
