So many desserts have been based off of the funfetti flavor and there are so many fabulous recipes for homemade funfetti cakes... but I have to admit, there's nothing quite like the flavor of the boxed mix.
It's awesomely sweet, packed with vanilla flavor, and has just a slight artificial taste that makes it totally crave-worthy. Oh, and you can't beat those rainbow sprinkles that actually show up when you bake them instead of bleeding into the cake.
I've made my own homemade confetti cookies before. But they never taste quite like the boxed cake does. So, I decided to try making cookies with boxed Funfetti cake mix. And guess what? This easy recipe results in confetti cake cookie perfection.

🍪 How to make funfetti cake mix cookies
As you can probably tell based on the ingredient list, these cookies are incredibly easy to make.
Start by preheating your oven to 350 degrees and lining two baking sheets with parchment paper.
In the bowl of a stand mixer or in a large bowl with a hand mixer, cream the butter until light and fluffy, 2-3 minutes.
Don't worry; if you don't have a mixer, you can use a bowl and wooden spoon or spatula with no problem at all. You'll just need a little elbow grease!
Mix whole egg and egg white into the butter until combined.
Don't worry if your mixture looks a little runny/clumpy... It will all come together when you add the cake mix.
Now, add the Funfetti cake mix to the butter mixture and mix until just combined, taking care not to over-mix.
Scoop about 2 Tbsp of cookie dough (I use a #40 cookie scoop) onto the prepared baking sheets.
Bake cookie dough balls for 10-12 minutes, until cookies are just turning golden around the edges, but are still soft.
Let cookies cool in the pan for a couple minutes before moving to cooling racks to cool completely.
