Everyone has their favorite flavor of Ben and Jerry's ice cream, right? Mine has always been, and will likely always be, Phish Food.
What could be better than chocolate ice cream with chocolate chunks and marshmallow and caramel swirls? Nothing!
I'm fairly certain that Phish Food is the most perfect ice cream ever and I will never ever get sick of it.
And if chocolate, marshmallow, and caramel are so delicious in ice cream form, wouldn't they be fabulous in cookie form, too? These Phish Food cookies prove that yes, they most certainly are!
🗒 Ingredients
If you love Phish Food ice cream, too, or you just like the idea of chocolate cookies with chocolate chunks, marshmallow swirls, and a caramel center, you'll definitely want to try these cookies!
Here's everything you need to make them (be sure to view the recipe card at the bottom of this page for ingredient amounts and full recipe instructions):
- All-purpose flour
- Unsweetened cocoa powder
- Baking powder
- Salt
- Unsalted butter
- Granulated sugar
- Large eggs
- Vanilla extract
- Bittersweet chocolate chunks: If only we could use fish-shaped chocolate chunks, but alas, regular will have to do!
- Marshmallow fluff
- Caramel candies: I use Kraft caramels, but Werther's or another soft caramel should work, too.
🍪 How to make Phish Food cookies
Making the cookies is also a fairly simple process!
Start by lining a baking sheet with parchment paper or a silicone mat. You don't have to preheat the oven just yet because the cookie dough needs to chill before baking.
In a large bowl, whisk together flour, cocoa powder, baking powder, and salt.
In the bowl of a stand mixer with paddle attachment or in a large bowl with a hand mixer, cream together the butter and sugar until it's light and fluffy, about 2-3 minutes.
Add the eggs in, one at a time, and mix until combined after each addition. Mix in the vanilla extract.
Mix the dry ingredients into the wet ingredients until they're just combined, taking care not to over-mix.
Stir in about ¾ cup of the chocolate chunks and ½ cup of the marshmallow fluff, reserving the rest.
Doesn't this actually look like a giant mixing bowl of the best ice cream in the world?
But instead of ice cream, it's Phish Food cookie dough!
Now, Form balls with about 3 tablespoon of cookie dough at a time (I use a #20 cookie scoop to scoop dough) and flatten dough ball in the palm of your hand.
Place a caramel candy in the center of the dough and wrap the dough around it, forming a ball. Make sure the caramel is completely covered by the dough.
Place the cookie dough balls on the prepared baking sheets, about 2 inches apart.
And using a toothpick or a skewer, gently swirl some of the remaining marshmallow fluff into the top of the cookie dough, creating a marbled effect.
Add a few more chocolate chunks to the tops of the cookies.
Place cookie sheet in fridge for 20 minutes to chill and while they're chilling, preheat the oven to 350 degrees.
Once chilled, bake the cookies for for 11-13 minutes, until the edges are just set, but the centers are still soft.
Allow the cookies to cool on the baking sheet before moving to metal racks to cool completely.
And let your ice cream cookie dreams come true! Because sometimes you'd just rather have a cookie than ice cream.
And sometimes you want a cookie with your ice cream.
In any event, these Phish Food cookies have all the elements of the Ben and Jerry's ice cream.
Right down to the gooey caramel center!

⏲️ How to store
I recommend storing the fully cooled Phish Food cupcakes in an airtight container at room temperature. When stored properly, they should keep fresh for 4-5 days.
You are welcome to warm the cookies in the microwave before enjoying if you want the caramel center to be extra gooey.
🎉 Variations on recipe
I wanted these cookies to stay as close as possible to the elements of Phish Food ice cream, but there are so many ways you can make them. Here are some ideas:
- If you don't have chocolate chunks, you can use chocolate chips. I like using bittersweet, but you can substitute with semisweet.
- If you prefer, you can add in mini marshmallows instead of marshmallow fluff.
- You can also swirl a caramel sauce into the batter instead of including the caramel center.
- Make a vanilla cookie base instead of chocolate if you want.
- Add any elements you like, including a peanut butter swirl, white chocolate chips, peanut butter chips, caramel chips, walnuts, pecans, toffee bits, crushed pretzels, Oreo cookies, etc.
