I'm not exaggerating when I say s'mores might be my favorite flavor combination of all time. Especially when coffee is involved. Marshmallow, chocolate, and graham crackers make for the best flavor combination ever.
So when
This Cold Brew starts with my homemade marshmallow syrup (you can use store-bought if you prefer), gets topped with a sweet marshmallow cold foam, and is finished with a chocolate drizzle and graham cracker crumbs.

It actually tastes like a s'mores: my favorite thing about this cold brew is that it tastes just like a s'more and just like the version you get at
The marshmallow syrup is made with real marshmallow fluff: I tested this recipe a lot and landed on toasting the sugar a bit, adding plenty of vanilla extract, and incorporating real marshmallow fluff for the full marshmallow flavor profile.
Most ingredients can be purchased or made from scratch: you can definitely purchase a bottle of marshmallow syrup and you can also purchase a bottle of cold brew instead of making your own. But I also show you how to make marshmallow syrup and you can follow your own fave cold brew method if you want. I also purchase the milk chocolate for drizzling, but it can be homemade, too.

Here's everything you need to make the
- Cold brew: you can brew your own cold brew or use Starbucks cold brew concentrate or another brand cold brew. If you don't have cold brew, you can use the iced coffee of your choice.
- Ice
- Marshmallow syrup: you can use a store-bought marshmallow syrup or make your own with my recipe shared in this post.
- Marshmallow cold foam: I share the recipe for this below
- Milk chocolate: for drizzling. I recommend using this milk chocolate sauce or something similar. You can also feel free to make your own. You can use Hershey's chocolate sauce in a pinch, but it's a bit thinner and sweeter than what Starbucks uses.
- Graham cracker crumbs: for topping
For the marshmallow cold foam:
- Heavy cream
- 2% milk
- Marshmallow syrup
And if you're making your own marshmallow syrup, you'll need:
- Granulated sugar
- Water
- Marshmallow fluff: also known as marshmallow creme in parts of the U.S.
- Vanilla extract
- Salt
☕️ Recipe tips
- If you're making your own marshmallow syrup, be sure to do that first as it will need time to cool before using it in the cold brew.
- For the syrup, I like to toast the sugar to get that toasted marshmallow flavor. I also add a full tablespoon of vanilla, but for true marshmallow flavor, I whisk in actual marshmallow fluff while the syrup is still hot.

- You can make the marshmallow sweet cream in advance and keep it in a mason jar or airtight container in your fridge. When you're ready for your drink, whip it into a cold foam.
- If you don't have a frother, you can make your cold foam in a blender or with a hand mixer. You can even just keep it in the mason jar and shake it vigorously. Your foam won't be quite as voluminous, but it will still give you a nice froth.


- As with all my cold brew recipes, I recommend using your favorite cold brew for this since the coffee truly shines. Lots of people like making their own, but I also really like Starbucks cold brew concentrate.
- One thing
Starbucks has been doing lately is adding the flavored syrup into the cold foam and the drink itself (instead of just in the cold foam). They did it recently with the Toasted Coconut Cream Cold Brew and have done it again by using marshmallow syrup in the cold brew and I love it!
- Be sure to give the iced coffee a good stir once you add the syrup so that it evenly distributes and doesn't just sit at the bottom.
- Top the drink with marshmallow cold foam and then add a drizzle of chocolate sauce and crushed graham cracker crumbs to make your s'mores coffee dreams complete.
Starbucks has made a lot of awesome summer drinks over the years, but I honestly think this s'mores lineup is the best yet. This drink is packed with summer flavor and will make you think you're sitting at a campfire with its toasted marshmallow, chocolate, and graham flavor.
I can't believe it's taken them this long to bring s'mores back!

🎉 Variations on recipe
I happen to think this s'mores cold brew is perfection as is, but
- Swap the cold brew for iced espresso if you want a stronger coffee flavor.
- Use the dairy or non-dairy alternative of your choice. I especially like oat milk or almond milk for this drink, but coconut milk is so yummy, too. (note that heavy cream is still dairy, so this won't be fully dairy-free unless you also swap that).
- Add a shot of espresso to your cold brew for an extra caffeine boost.
- Use less syrup in the drink for a less sweet drink or use more for a sweeter drink. You could also add vanilla syrup, brown sugar syrup, or caramel syrup for more flavors.
- Line the cup with chocolate sauce before pouring in the coffee and syrup. You can even add some to the bottom of the cup and/or a layer of graham cracker crumbs.
- Add a caramel drizzle for extra sweetness.
- Top the drink with mini marshmallows in addition to the graham cracker crumbs for more texture and fun.
- Drizzle with mocha sauce instead of milk chocolate if you want or if that's what you have on hand (it's what
Starbucks uses in lots of their drinks). - Use flavored cold brew, like vanilla, as your base for even more depth.

S'mores Cold Brew {Starbucks Copycat}

Ingredients
- 10 oz cold brew
- Ice
- 1 tablespoon toasted marshmallow syrup (store-bought or homemade with recipe below)
- ⅓ cup marshmallow cold foam
- Milk chocolate sauce for drizzling
- Graham cracker crumbs for topping
Marshmallow Cold Foam
- ½ cup heavy cream
- ⅓ cup 2% milk
- 2 tablespoon marshmallow syrup (store-bought or homemade with recipe below)
Toasted Marshmallow Syrup
- ½ cup granulated sugar
- ½ cup water
- ¼ cup marshmallow fluff (or marshmallow creme)
- 1 tablespoon vanilla extract
- ⅛ teaspoon salt
Instructions
- Pour cold brew into an ice-filled glass. Stir in toasted marshmallow syrup.
- Top drink with marshmallow cold foam. Drizzle with milk chocolate sauce and sprinkle graham cracker crumbs over cold foam.
Marshmallow Cold Foam
- Add cream, milk and marshmallow syrup to a mason jar (or other airtight container) and shake vigorously. Or mix all ingredients in a bowl until well combined. This is your marshmallow cold cream... Keep it in the fridge until you're ready to turn it into cold foam right before using.
- To turn into foam, you can either use an electric frother, hand mixer, or blender with ⅓ cup cream at a time. Alternatively, you can shake the mixture vigorously in a mason jar until it's frothy.
Toasted Marshmallow Syrup
- Add sugar to a small saucepan in an even layer over medium heat. Let it sit without stirring, until the edges begin to melt and turn golden. Gently swirl the pan until the sugar is fully melted and a light amber color, about 4-5 minutes. Be sure to watch it closely as it can go from amber to burnt quickly.
- Carefully pour in the water. The mixture will likely bubble up vigorously and hard caramelized bits may form. Stir over medium heat until any hardened bits fully dissolve, about 2 minutes. Remove from heat.
- While the syrup is still warm, add marshmallow fluff and whisk until completely smooth and incorporated. If it's not fully dissolving, you can return the pan to low heat for 30-60 seconds while whisking.
- Stir in vanilla extract and salt.
- Strain mixture through a fine mesh strainer into a heat-proof bowl or mason jar and let cool completely.
- Store in the fridge in an airtight container for up to 2 weeks.
Notes
- Starbucks uses "marshmallow syrup," but you'll likely want to find a "toasted" marshmallow syrup as their drink definitely has notes of toastiness.
- Cold foam recipe should make enough for about 3 drinks. Turn it into cold foam in batches and keep the leftover sweet cream in an airtight container in your fridge until ready to use.
- Marshmallow syrup should keep fresh for about 2 weeks in your fridge in an airtight container.
